If we're throwing out opinions, here goes nothing. Lego needs to slow down on the existing IPs. Having a theme based around their own ideas or historical ideas is much more appealing to me. The OG castle lines (and even space lines for that matter) had little to no story, a few named characters for the magazines, and tons of open ended sets that let kids create their own scenes and literally build their own fun. Set of an existing IP like star wars or HP have sets based around scenes from movies and tv shows that imply the child act out premade content. Not that kids don't play their own way, but it puts the play on rails like a bad D&D campaign and pushes the kids toward a certain type or style of play. Also, the royalties to a massive company like Disney can't help Lego's bottom line all that much. There was a breakdown video exploring whether or not Lego sets were getting more expensive, and sadly, they are right in line with the inflation of everything and not much worse than it used to cost back in the day, in a relative sense.
tldr; open-ended, non-IP themes will allow smaller, cheaper sets over all, and castle is a contender for that.
If Lego DID want a story line for, say, a castle theme, just hire a children's novel writer and familiarize them with the factions and history of castle and set them loose. Create a tie-in novel to get kids back into reading. Go low-tech and old school and Lego will go back to being a classic toy in no time. Not every experience needs a screen or batteries.

My boys like Ninjago more. I don't want LEGO to discontinue a line if it is successful and profitable. It is only because of good profits that LEGO can afford things like LEGO ideas, the Bricklink Designer Program, and nostalgic themes that appeal to AFOL. I think the best hope for a new castle theme is if LEGO gets a DnD license and compliments the sets with an original TV or book series. The TV or book series will need to focus on individual heroes with unique personalities and traits.

I think this is a situation where Lego thinks (eroneously) that nobody wants castle stuff. Even if it won't have a broad appeal to children, they seem to make stuff for adults that do well, so there is a market for them.
The best way to approach this would be as follows:
    - lean into the old series, flesh out a core world out if it and add to it (with a decent more mature storyline as well)
    - make it clear there will be more castle sets (the uncertainty is killing interest, I am currently buying lego because it's been a good year so far - space, good ninjago villains, dreamzzz - but the fact tha I don't know if they will make more castle or not is the difference between me getting multiple od each good set. I have a huge project in mind, but it will never work with only lion knights and fakcons. I will need more factions.
    - make one remake set each year, and they should make it a series and market it as such (eldorado was great, now we need the other iconic sets - for castle we need black knights castle, to have a black contrast castle to the lion knights, full color plumes and so on, a small forestmen battlepack with red, blue and black colored torso collar and matching arms, a decent dragon masters set with plumes, shields, a dragon mold, not brickbuilt, wolpack renegades GWP, maybe a wolfpack tower proper set, dark forest ambush, royal knights - but redesigned for them to fit with the lion knights faction, and a willa set with all the silly knights that frightknights had)
    - a dedicated marketing event like they did with space: City with smalland medium sets focused on farm animals and peasant life that can be used in modern city as well, small faction battlepacks with 3 to 4 knights with armor, weapons, horse and some siege weapons with at least 2 or 3 variants of torso print for each faction currently revived and future reimaginings or new factions, a huge joust and medieval carnaval series with mid to large sets like an archery contest, jousting tourney, melee ring, jester and actor troup, viewer stands and so on (great oportunity to bring back the CMF factions everybody wants but can't afford because the knights are $80 or more), a friends castle line with 2 or 3 sets related to art and theater to keep it in line with friends theme, fantasy castle is Dreamzzz - they already do it, but they could have gone a few steps beyond with proper molded pegasus, plant deer, cat owl, manticore, and so on-
    - keep doing great vilains in ninjago (most of my fantasy armies are made out of ninjago sneks, crystalized drakonids, skeletal undead and ninjago orcs and goblins)
    - the new D&D rumors if they are to be believed will give us a great set of hopefully neutral torsos that can be adapted to yellow and flash tone heads - we just need a few small dreamzzz sets with yellow elf ears/hair or helm combos)
    - Keep up great harry potter abd Lord of the rings sets (these can complement castle, it needn't be competition)
    - release more disney sets like the snow white cottage
This should sum up everything they should do. I would love if they did at least a half of the non franchise suggestions I made.

Affordability is a huuuge factor. Less overly elaborate sets also have a nostalgic quality that can grab adults just as easily as it can with kids. Though, kids might not want a simpler color pallet associated with those older sets, it's hard to say.
As for the theme, it had its waves. And each chunk was a certain demographic. Both waves of '00s Knights Kingdom were different from Lion Knights or even Royal Knights, after all.

It feels like Lego has been very reactive to market trends (and I say "feels" since we don't have any actual data, just guesses based of a handful of qualitative factors) and not proactive. They forget that they are a leading toy brand and that they can influence child demand. Maybe a reason kids these days don't care about Lego Castle is that they never had the opportunity to enjoy it like we did...

I think there needs to be a pop culture event that is medieval themed in order to get kids interested in Castle. Back in the day we just had books/comics and a the lore of Camelot, LoTr, and Conan etc. to inspire us as kids. Nowadays there is so much more content and video games. I doubt they are taught much about medieval history in school either. So kids need to get a blast of some sort of castle theme from outside LEGO. In other words, LEGO would/could/should profit secondarily to a pop culture castle phenomenon. Kinda like they did with Star Wars and Harry Potter.Only, it can't be another franchise.

The world has changed since the times lego created castle sets. Where older generations grew up with very little media (TV/Shows etc). Going on a trip and seeing historical landmarks, including a castle (at least in Europe), was a good form of entertainment for a family. Now a lot of other things are fighting for our attention. Media is everywhere, starting in classrooms at 4 years old or sooner for some kids. And media does not show knights and castles , it shows superheroes and my little ponies etc... So I guess the whole castle fantasy also disappeared from the public interest.
Having said that, not sure what we as consumers can do to bring it back. Like others pointed out, it's also a matter of supply and demand, and if Lego doesn't supply there will not be demand either :). And Im not talking about the big 200+ euro sets, they are not accessible to the general public. My 7 year old son loves castle, probably because I do. Had I not exposed him to it he wouldn't know about it, and he is also heavily into superheroes like as his friends are too.
Best hope I have is via popular media themes generating attention to castle. Or at least fantasy. DnD is a very good opportunity to show Lego the fanatasy theme sells well. Lets see If that evolves into more interest for castle too.

LEGO ain't getting Ninjago. I wouldn't be surprised if it was its most popular non-licensed theme lol.
For the Castle line to return we need either more popcultural interest in medieval/fantasy themes (MCU is slowly dying of, so there's some chance that the tide would turn and fantasy stuff returns to the kids' good graces) or LEGO's own show to accompany and popularize the line, as was the case with Ninjago. Ninja stuff wasn't as popular two decades ago yet the theme succeeded extremely well - hire good writers and we might see Castle achieve success.

But there are no sets to buy and that is the reason why I have to MOC sets for them in the last 4 years and getting the parts by bricklink or PAB by myself.
A was to return is something like they did in the 90s, small (and payable) sets would be awesome, just like they did with star wars.
Some battle packs with black falcons, lion knights, vikings or peasants, eventually with different "side builds" like small carts, siege weapons or parts of a modular fortified village.
My son really love his black falcons Castle which I created for him and all the small parts of the wall surrending the village, like a blacksmith, a tavern, a bakery, a weaponry, a falconry, some traders, a stable and so on.
It has to be small sets including a small part of the wall with a small Interieur together with 1 or 2 or 3 figures for something between 10 and 20 EUR, this would be awesome to create their own towns.
The same could be made with the forestmen, a battle pack with a brick build tree or a treehouse with 2 figs like the hideout as official set.
There is so much which could be done but they don't do it and no one knows why. 😢

lmfao they will never replace Ninjago with Castle, it makes them shitton of money, and ppl keep coming back (eg: Dragons Rising, both Season 1 and upcoming Season 2). The show is still popular and so are the sets.
I'm speaking from the perspective of a Ninjago fan: Chima died (well the theme at least, not in the lore of Ninjago), Nexo Knights (which is kinda the closest to Castle you could have in the 2010s) died, and these were shows/themes that were intended to replace Ninjago after Season 2 of the original show, well it's still here 13 years later.

I don't want Lego to make castle sets for kids. Keep things as they are.

I hoping the keep the high quality sets while additionally having smaller sets that are compatible with the world Lego is currently creating

Honestly, I always loved medieval themed things even tho I'm gen Z. Maybe it has to do with me being into history VERY much, but I always loved playing with my castles. In the early days, Ninjago too was a semi-medieval themed show if I remember correctly with blacksmiths and medieval villages in an Asian setting. I don't think it's the issue that kids don't care about castle. The creator black falcon fort hasn't retired and it's been already like what? 3-4 years since it released? It's the only castle theme set at a decent price and it looks like people are loving it. I think the main issue is that LEGO is just scared to do anything that's even remotely risky. Ninjago made millions, so they are making more of it. Both Ninjago seasons and similar shows like Dreamzz and Mon(k)ey Kid.
