My Favorite Crunchy Beef Tacos | Tacos Fritos

  • I truly love these tacos. I grew up eating these and still make them at least a couple of times a month. The taco meat recipe is fantastic BUT the star of the show is those crunchy corn taco shells. Both the meat and taco shells are gluten free too, if that is important to you. If you want to cheat and use one of those taco seasoning packets to make the meat, go right ahead. They are pretty tasty and very easy. Just try the ground beef taco meat recipe at least once! Trust me, it will blow you way and it's not really any harder to do. Recipe is below. Enjoy!
    Ground Beef Taco Meat Recipe:
    1 lb Lean Ground Beef
    1 tbsp Chili Powder
    1 tsp Paprika
    1/2 tsp Cayenne Pepper
    1 tsp Cumin
    1 tsp Granulated Garlic
    1/2 tbsp Dried Minced Onions
    1 tsp Mexican Oregano (or regular oregano if you can't find it)
    1/2 tsp Salt
    1/2 tsp Black Pepper
    2 tbsp Tomato Paste (or 1/4 cup tomato sauce)
    1/2 tbsp Masa Harina (Maseca works great)
    1/2 cup Beef Stock or water

    Made this today and it was amazing! I’ve never had Mexican oregano before and it smells and tastes more earthy and plant-like. It has an almost bay leaf/umami taste. The tomato paste also delivers a great umami punch. The wife liked that the seasoning wasn’t overly salty as the packages typically are and reaaly liked it as well. That’s it, no more store bought seasoning for us. Thank you so much Bill. Cheers.

    Hmm. White corn tacos sound like a level-up from anything I've been eating around my taco fixin's. Gonna hafta give that a try along with your taco meat mixture, next time I get an ambitious cooking compulsion.

      White corn tortillas make the best tacos. They are just so much smoother and have such a great flavor.

    If you add a slice of American cheese in that taco you pretty much have a Jack in the box taco lol. I’m gonna have to try the meat you made for the next time I make tacos.

    I’m going to have to try making this with your taco meat recipe, I’ve used the seasoning packages for far too long. Will be interesting using Mexican oregano, that’s a new one for me. And don’t even get me started on Taco Bell’s packaged seasoning, my wife and I grew up on Taco Bell and know the flavor profile well. No, not even close, El Paso and McCormicks is better. I had to add spices to make it palatable.
    Velvetta on a taco? I’m not against that stuff, had it growing up as well, just never on a taco. Cheesesteak, yes and still do on occasion. Anyways, great episode, looking forward to the next one, cheers.

      If you add 1 tsp of lime juice to this recipe it is spot on for 1980s taco bell. That was the golden age of fast food...
