Really appreciate you wonderful act of kindness! For the vendor , whoever are is clients , they need the dignity of clean , hygienic food. The street is open to elements , the vendor does not have to pay for any overheads as a street cart vendor, doubt he even pays taxes so he does earn a fair profit , the dirty cloth he wipes the cooking pan , gloves are probably a thing he has never heard off something widely available India and costs nothing , Covid has thought even the marginalized , the use of sanitizer's increase your sell price by 5 or ten rupees but provide some dignified hygiene,
