You are right. At 4:10 the video shows a jumper being drawn between the NO and NC contacts, coming off the load side of the single pole breaker

I know it was forever ago you asked this question, but the answer (for you or whomever else is seeing this) is… it depends! lol.
The control circuit and controls equipment (switches, lights, coils, etc) must match. So, for instance, if the line power in this video is 3phase/208V, but the lights and coils operate on 120V, then yes you need to bring a neutral. If the devices can operate on 208V, then you can use L2 or L3 instead of the neutral.
Most importantly, they must match, regardless how you design your system.
