I have used your beginner bread recipe and was surprised at how much air there was in the dough and baked bread. I have experimented a bit and tripled the recipe using mostly whole wheat flour and cut the yeast down to 1.5 tsp for the three loafs and that gives me about the "weight" i like, a more substantial loaf. Thanks for the work you do to encourage others. I can't believe how quick i can prepare the dough for first rise in the oven, so easy and fun too!

I have made this bread 3 times and we love it. The first time I made it I followed the recipe and turned out great. The second time I substituted 2 cups of the flour with whole wheat flour, it turned out very good but somewhat heavier which I expected. This week I made it again (by the recipe) and baked half the next day. Today we decided to try it as baguettes, we baked 2 at 450 deg. for 25 min. It turned out fabulous. This is definitely a keeper. I made this today after watching the video this morning. Definitely a winner! And different after all of the sourdough I’ve been making 😅 I didn’t half the dough, but next time I will! It completely filled my huge Dutch oven 😅. Oh and the crackling sound when it’s cooling is the BEST!

Hello Jill. We use this recipe from your book all the time. However, here in Virginia, the dough doesn't come out like yours, at all. It's almost impossible to work, too sticky. I'm going to try less water, next time, to see if I can get a consistency like yours. We did just get a loaf shaped Dutch oven for making more uniform sandwich slices and it worked great! I have a disability and baking bread for me tends to be an all-day task and it's the only thing i can do that day. If i can make the dough whenever i feel up to it and then bake it in a few days it would be a lifesaver!
Carolyn from Homesteading Family just did this about two weeks ago so I made my first batch right afterwards. I was able to get 3 really great loafs out of one batch and created a fresh loaf every other day. The initial dough prep is the bulk of the work and then easy peazy loaves all week long that takes a fraction of the time and energy to make. It's a total game changer for making bread during the week when you don't have the time or energy to invest in using a more complex recipe. I have your book, I should have looked there for the same recipe. Ahhhh well it's great to see like minds and methods amongst my favorite youtubers.
I've made this recipe for the first time and love how easy and flexible it is. My only issue is my loaves got slightly dark on the bottom and on the top of one crusty edge. Other than that it came out perfect. Think I need an oven thermometer to see if my oven is too hot? Thanks Jill for this great recipe

Dear Jill, I am one of many who does not have a house oven and I dont own a dutch oven, is there a way to do what your doing and get the same results without the great dutch? In a Toaster oven? Now this one made me laugh lol Heartily : 'Wait for it to cool' Melted butter on freshly baked HOT bread is where its at... for me.
Hi, Cynthia! I tested this out the other day! I let one get back to room temp first, and it was so worth the wait… THAT one was even better than the same-day bake (and better than cold bake).
I made this today. Unfortunately the first loaf didn’t turn out well. I don’t think it cooked all the way through. I used a cast iron Dutch oven I did heat it for 45 min at 475 and then baked. The outside was gorgeous but the inside was very heavy. I am trying the second loaf tomorrow. However I have a confession and it might be my problem. I did not punch down my dough but the bowl fell off the table upside down. (Thank goodness for the lid). But of course it fell. I’m going to see if the second loaf rises overnight and I will try again tomorrow. Excited to see if I do good on the second loaf. I might have needed to use a bit more flour too.
I always weigh my flour and noticed that she used cups. I think that made a huge difference as my dough is super wet and sticky! I had to add more flour and don't think this will come out right as there are no air bubbles at all at this point. I will try again but it would be super helpful if she weighed out what she actually gets in 6 cups. Not sure if she reads these comments anymore but here's hoping!

My question is - my dutch oven (which is a few years old) got BLACK on the bottom. It was by no means pristine looking to begin with but now it is scorched. Yours did not look like that. Is that normal? Can I use it again or is it a goner?
It appears that whether you are letting the dough sit for 45 minutes or 2 hours with dough taken out of the refrigerator, that you don't cover it while it's sitting on the counter. Is that correct? Thank you for this excellent recipe!
Do you think I could use my gluten free cup for cup flour to make this. I hate store bought gluten free bread. It just falls apart and taste awful. I’d love to learn how to make some myself.

We have a wood stove that gets extremely hot and I was wondering which brand you would recommend and which ones you use most (Dutch oven, griddle, etc.)? You can usually swap half the white flour for whole wheat but for all whole wheat you need a recipe written specifically for that because whole wheat requires adjustments to the liquid.

What is happening to the second loaf while the first bakes? My experience is that it will spread quite a bit if left out to continue to rise. Did you leave the second loaf on the counter? In the fridge?
Yes! I just made this today and the first loaf came out great while the second spread out and came out completely flat like a ciabatta?! I wonder if we’re supposed to reshape it at some point? Also it feels like it should be covered otherwise it dries out and almost forms a skin? First one was yum!
I tried this today and my dough turned out SUPER sticky. Very hard to handle. I added some flour, but the dough didn't seem to get that smooth consistency. It just all got stuck to my hands. I was intimidated to make bread and this is why 😭😭😭 I'll try again in 6 months lol

I tried this today and my dough turned out SUPER sticky. Very hard to handle. I added some flour, but the dough didn't seem to get that smooth consistency. It just all got stuck to my hands. I was intimidated to make bread and this is why 😭😭😭
I'll try again in 6 months lol
