    Shahi Aloo Masala- is a rich and flavorful dish, perfect for special occasions or when you want to indulge in a royal meal. This North Indian delicacy features tender potatoes in a creamy, aromatic gravy infused with spices. Here's the recipe:
    Ingredients:
    - *4-5 medium-sized potatoes* (, peeled, and cut into half)
    - *2 tablespoons oil* or ghee (clarified butter)
    - *4 onion* (finely chopped)
    - *1 tablespoon ginger-garlic paste*
    - *1-2 green chilies* (slit)
    - *1/2 cup fresh cream* or yogurt (for richness)
    - *1/4 cup water* (adjust as needed)
    - *1/2 teaspoon turmeric powder*
    - *1 teaspoon red chili powder*
    - *1/2 teaspoon cumin powder*
    - *1 teaspoon coriander powder*
    - *1/2 teaspoon garam masala*
    - **1/2 teaspoon black paper powder
    - *1/4 teaspoon cardamom powder*
    - *1-2 bay leaves*
    - *Salt to taste*
    - *Fresh coriander* (for garnish)
    - *Saffron strands* (optional, soaked in warm milk)
    Instructions:
    1. *Fry the Potatoes:*
    - fry the potatoes until coating, and cut into half. Set aside.
    2. *Prepare the Base Masala:*
    - Heat oil or ghee in a pan. Add bay leaves and let them crackle.
    - Add chopped onions and sauté until golden brown.
    - Stir in the ginger-garlic paste and green chilies, cooking until the raw smell disappears.
    3. Cook :*

    - Add turmeric, red chili powder, cumin powder, coriander powder, garam masala, and salt. Stir well and cook for another 2-3 minutes to blend the spices.

    6. *Cook the Potatoes:*
    - Add the potatoes to the gravy, stirring gently to coat them in the masala. Let it simmer for 5-7 minutes so the flavors blend.
    7. *Finish with Aromatics:*
    - Sprinkle in garam masala, and cardamom powder. Stir and cook for another 2 minutes.
    - If using saffron, pour the saffron-infused milk into the dish for a luxurious aroma and color.
