4-5 kiwis
1 tbsp sugar
75g vanilla cake or muffins
125g (1/2 cup) cream cheese (such as Philadelpfia)
2 tbsp sugar
1/2 tsp vanilla
125g (1/2 cup) whipping cream
fresh mint leaves for decoration (optional)

Hi, Thank you for this nice recipe. I will try it with the yellow kiwi, kiwi gold. One question though: what is the added value of cooking the pureed kiwi? Will it change the taste of the kiwi in a positive way? Or is there another reason? I'm not sure. Can I just use the uncooked pureed kiwi (with sugar) and mix it with the cream cheese mixture? Or will the cream cheese mixture become too watery that way?

Hi dear 🩷 Thank you 💟 raw kiwi reacts with milk products and makes it super bitter and sour due to enzymatic action. Hence why kiwis have to be cooked first to break down the enzyme 🥰

Ok, I tried to make this. I was not successful. All went well until I poured the kiwi into the mixture it did not thicken up, and I had to toss it. I don't know what I was doing wrong. Could you please help me

I'm sorry to hear that. Make sure you have used all the correct ingredients and followed all the steps correctly. The cream base should have been whipped until stiff peaks before pouring cold kiwi puree in so I don't understand what could be the issue.
