Nice to see the high quality materials being worked skillfully by knowledgeable craftsman. ~ There is a current school of thought that recommends discontinuing the practice of amending the soil surrounding newly planted trees. The reasoning is that in time a tree’s roots will need to grow into the poorer , unamended soil of the garden and obtain sufficient moisture and nutrition from it. If the newly developing root system is overly fed and supported by rich earth placed close to the root ball , this may discourage the feeder roots from quickly spreading widely into the poorer soil. Spreading roots are the underground support structure for the trunk and branches. It’s important to establish this structure quickly, so that the growth of the tree is not interrupted or slowed during it’s vulnerable transition period from being field grown, balled and burlaped and then planted in it’s new location. Not amending may be a particularly valid approach when planting in heavy clay soils. In such a case the planting hole may effectively become an underground pot with poor drainage, if it is filled with amended earth. The roots emerging from the root ball may take the path of least resistance and simply circle the planting hole through the rich amended soil , never penetrating the denser surrounding clay.
That's pulverized Gypsum. Do a bit of research on it since it sounds like you don't know what it is; as it solves/helps all your listed concerns - it changes the surrounding dense clay's chemical characteristics drastically (underneath and around to the dug hole; or wherever the water washes away or soaks into), aerates and loosens the clay by changing its' charged particles... in turn, air, water and roots can penetrate the surrounding dense clay hole much easier. Some people use it in the US (the good gardeners/horticulturalists anyways); but it isn't common practice in the States at all and is almost never mentioned in the States funnily enough (especially on YT). It is commonly used in Japan and Asia though (where the true master gardeners are I guess).
There is a time and place for everything, and by degrees. Select the proper plant for the soil, but I believe amending the soil can be of benefit provided the contrast between existing and amended soil is not too drastic.
also removing the sac and ropes is a must. I dunno why they didn't, but leaving it is a great way to get your tree root bound and die. Maybe in Japan it rains enough that it doesn't matter, but elsewhere remove ropes and sacs.
2 questions. What is the name of the bamboo looking plants they placed in the front by the step, and where can I get a pair of shoe/boot that the guy in all blue is wearing. The ones that separate the big toe from the rest.

It's not a problem because the roots come out through the cloth that's wrapped around the roots! That cloth will also rot away after a while.
