Why an enzyme which bind a lipid doesn't bind a polysaccharide?
This is due to the specificity of the enzyme as some enzymes are lipid specific while others are polysaccharide specific.

Michaelis-Menten kinetics are characterised by the assumption that the enzyme and substrate participate in an equilibrium with the enzyme-substrate complex which is not disturbed by product formation during the period that the initial rate of reaction is measured.
