    I am a big fun of croquettes and when I start eating them I cannot stop.

      me too but in Poland krokiety ( nearly same seach as croquettes ) are different dish. but they are fine probably i will try them.

    made these today but used a different filling, chopped cooked prawns and fried red onion in a flour and milk mixture to make a paste. my gf said ahed had shrimp croquettes in holland and i surprised her with this adaptation of your wonderful recipe. she was very pleased. thanks vincenzo and good shout on the nutmeg.

    Love these remember them as a child but mine never turn out as I remember them. Usually fall apart, maybe letting them sit is the trick?? Will try it again. I also remember garlic in the potato mix and not ham. Hmm will try both. Thanks for the tips.

    I've never made croquettes because I have an aversion to deep frying, but I think I want to try these. I'd go with the ham, definitely, but i might go with provolone or fontina instead, and maybe throw some minced roasted peppers into the filling. No dip is required, but I can't help thinking it might be nice with a little parsley and basil on top to brighten it up. Like you say, these croquettes are comfort food at its best, but throw in the peppers and an herb garnish and it adds variety. It's a great lunch, as you enjoyed it, but it would also work for an afternoon wine and snacks party. I bet they hold well in a warm oven.

      A potato ricer isn't suitable for making spaghetti. Look for a pasta maker or rolling pin for authentic Italian pasta. Happy cooking! 🍝👨‍🍳

      Absolutely! You can bake the potato croquettes in the oven for a healthier option. Preheat to 400°F (200°C) and bake until golden brown.

    Unsure if you will see this, but was intrested to know if this could be done in a airfryer or even in the oven? For people who might not wanna use a lot of oil. Mostly wanna know if you have tested thease methods and if you found any issues/diffrences to them! Love from Sweden!

    Forget the ham, replace it with guanciale (cook it first). I’ve also done these with tuna, and even prosciutto works well. Everyone likes cróquets

      Either: do all but the frying ahead of time, you can freeze them or keep them in the fridge for 4 days to a week. Or double fry them, where the first time you fry them at a lower temperature. Double fry gets more crispyness too!

    Love your videos, but I can give you one advice as I’m polish and we eat potatoes every day lol you never put potatoes in hot or boiling water as they won’t cook evenly. Always start in cold water. It’s not a pasta.
