I know I am almost a year later BUT I followed this recipe my very first time making jelly and first time having beauty berries and OOOOOOOMMMMMMMMMGGGGGGG. It’s soooo good. Thank you for such an easy simple to follow recipe. I can’t wait to make more jellies with you. I gathered my ingredients and them make it alongside you pausing when I needed you to wait for me 😂 It was super easy.

We have a plant that grows here in South Texas that’s called Beauty Berry, also, but it is not y’all’s Beautyberry. It does prefer cooler soil so it grows well around creeks. I like them. We have wild Texas Persimmons that taste sweet almost like figs & cherries. I meant to make jelly this year but cuz of the extreme heat & drought, I decided to leave the fruit alone for the wildlife. There’ll be next year! We do have a plethora of Prickly Pear Cactus. The huge pink & purple fruit is called a tuna. They taste like bubblegum & smell heavenly! Of course there’s a bazillion tiny hooked thorns that have to be singed off before processing the tuna. Oh. And have to wear snake boots & go with the dogs cuz it’s highly snakey areas. Rattlesnakes love PPC patches bigtime & often den nearby cuz the fruit attracts rats which is a feast for snakes. Lovely, right? Save me some Beautyberry seeds & I will write y’all soon. I’d like to see if I can get them to grow here. And yes I know they’ll spread like crazy. It’s fine. Almost everything here is thorny so it’ll be a change! We have a creek & riparian strip along it. We are supposed to have nice weather this week in Alabama in the mid 80"s with low humidity and no rain..... That is very rare to get 5 to 7 days in a row of nice weather but the giant blood sucking satanic mosquitoes are still waiting on me to come outside lol.👍😃💙🙏

Just picked my berries this morning! I make it every year and it's delicious. People love to be gifted a jar, too. I freeze berries to make more jelly for the holidays as gifts.
I froze my berries and so many turned light brown I was afraid to use them. Did yours turn brown after freezing and how was the color of your juice/jelly?
Everything we have read about the beauty berry sez that they do grow in AK. Maybe not in yout immediate area. Just keep your eye's open. If you find some. Get some cuttings.

I just discovered this plant when I moved to Knoxville last year. When I found out I could make jelly from them, I had to try. It was my very first time making jelly of any kind, but MAN, THE JELLY WAS AWESOME! Using a food mill after boiling them made it so much easier. This is now my favorite jelly, but I have to say, it was REALLY hard to get 6 cups from my tiny bush. I only got 3 cups, so I made a half batch.

They are beautiful and the jelly turned out really well. We were ripping them out of the ground by the dozens until we found out they have all the attributes in a plant we were looking for. Made insect (skeeter) spray out of it too. Works really well!!
might turn out like syrup. but it'll still spread and put flavor on a biscuit or pancake. never did it like that. the sugar boils and thickens. Let us know how it turns out so we can tell others. Hope it all goes well!!
Jamie. I made beauty berry jelly last year it didn’t set. Can I still open jars and recook. Or should I just dump it ? Guess I should not have waited so long to ask this question
Use them for pancake syrup or pour over ice cream and/or cake. Still good. Otherwise dump them. We used them anyway. That happened my first time, then I did it like I do in the video and they come out everytime. Just need to make sure that you boil it until you cant stir it down.
I’m about to make some with allulose to see how that turns out. It’s a rare sugar, about 70% the sweetness of sugar, and cooks, caramelizes, and crisps just like sugar. And it has no aftertaste like other artificial sweeteners.

Just verified and the video is correct. Tammy's jelly came out absolutely perfect. She uses this recipe every year. It's 6 cups of berries. 8 cups of water to make infusion. Then 4 1/2 cups sugar, 3 cups infusion and 1 suregel. Can't double batch. It will not set

My first batch didn't set years ago and used it for pancake syrup. I was trying to do to much a one time. Also make sure that it reaches jelling point when boiling. It's different everytime. Try again. don't give up. Friends
I thought the sure jell could only be cooked for 2 minutes or it would deactivate it. So i cooked it awhile with sugar then addedl the suregell near the end and cooked 2 minutes. I hope it comes out. I have them growing in my yard. l@@allaboutliving

The first time it came out so professional but now each time it's a challenge so I need to figure out the secret and do another batch. I still have berries to make another small batch or I could rework this one. How long does it last without the water bath at the end?
So glad found this one. I've been canning for years, but never messed with jellies. We have 10 acres of former paper pine forest in North Florida, now a lot of native plants are returning and Beauty Berry is one of them. Birds love them, but then I found out I could make jelly. First batch, different recipe from yours, came out more like syrup, but DELICIOUS!! I picked more yesterday, will be making yours today. I know I didn't boil my first batch long enough. I eventually want to experiment with lower sugar recipes. I did learn that most store bought jellies are even more sugar ration to juice than most homemade recipes.
Sounds like you on the right track. Another viewer varied from Tammy's recipe and it turned out like syrup. Tammy made syrup also, then figured it out. Great Jam!! Better than Grape Jelly. It's awesome.

Watch out, they spread like strawberrys. The branch's will take root and run. They are very difficult to keep under control here.

Surprised to hear you fretting about mosquitos when, supposedly, beautyberries are an excellent insect repellent. At least that's what they tell me.
If a mosquito gets within 2 feet she starts fretting. She has beauty berry spray. I shake my head alot.
So I don't put the actual berry in there

Have never tried. It's alot of sugar. Use in moderation. Just a little here and there. Flavor spreads easy.
