Rice flour pancake also known as khola pitha, chitoi pitha and chitol pitha is a delicious traditional bengali winter pitha. It's actually very easy to make if you know the correct procedure. People love it any time as a snacks, specially in winter season as mentioned previously. Chitoi pitha is an enjoyed dish all throughout the country of Bangladesh. It's made with rice, has a rather sticky texture and goes incredibly well with any kind of curry, honey, vegetables or mashes.
Ingredients:
1. Rice flour 3 cups
2. Warm water
3. Salt
Procedure:
1. In a bowl, take the flour and mix in salt with it.
2. Gradually start adding water and mix it with your hands.
3. When the consistency is in between of liquid and sticky, cover it up for 15 minutes.
4. Lift the cover and add in hot water and mix it in properly
5. Take a big spoon and scoop some batter up and let it fall down in the bowl. Continue this action for 3-4 minutes.
6. Take a pan and heat it up to a very high temperature
7. Take some batter and pour it in
8. Keep covered for 3 minutes, pick it up gently by scratching with a knife
9. Serve and enjoy 😊
(NOTE: Add some baking powder to get a softer and fluffier pitha)
