Quick correction: this is probably more like 14-15% total abv due to the peach juice diluting the batch which also explains how the yeast kicked back up!
But also I don't get how you got to those additional over 2% of ABV, if the yeast hypothetically ate up only 5 of those additional 21 points? Wouldn't that mean adding just those 5 points to the original 102, which is altogether 107 gravity points? 0.107 x 135 = 14.44%. That's without the dilution included. Edit: Sorry, commenting as I'm watching. Anyhow with those additional 8 points afterwards, that would've been 0.115 x 135 = 15.52%. Not 17%. Still quite above the stated tolerance tho and ultimately what's important is that it's good! Cheers!
The 2% had me confused as well, as those 5 points are more like 0.7%, hence the correction I take it. After the 5 points, there was another 8 point drop though, so I guess roughly 15.5% before the backsweetening 😉 Really like the videos, hope to get starting on some own brewing 😁
I'm confused by this as well. If the peaches added 0.021 and ended up dropping 0.005, it should have only gained 0.675% ABV bringing it to ~14.445%, right? I'm just checking my math here to make sure I understand this.
keep it the way it is please. The conversational rhythm of your videos is a big part of the charm of the videos and part of what brought me to your channel. It's like I'm hanging out with my buddies and they're walking me through what they did to make their mead. I watch a lot of different youtube presenters and I come back to yours every time because of that vibe.
Same here. You guys know I’m no stranger to making mead. I’m always on the lookout for recipes but I don’t just watch for those. The vibe, the tongue-in-cheek unscripted style, the banter, the humour and the rants do it for me. Derica’s celebration of her quirky and unique humour. The Red Bucket of Sanitisation is a classic I’m always happy to see. Please keep it up!
re: the b-roll question. I started watching cuz I wanted to start brewing, and seeing the two of you going through the process was a helpful kick of "oh, I really *can* do this". Now I've got close to a year of brewing experience of my own and still watch to pick up ideas or techniques I haven't seen yet. Your own b-roll, when it's relevant like the bubbles and carbonation, worked fine for me. If it was too frequent a stream of other jokes or whatever it would start to feel like some of it's getting cut out or that I'm missing major steps like definitely happens with certain, say, cooking channels. It's sort of a confidence booster for a noob. For what that's worth.
Yes, having your own b-roll is good for those close up shots you can’t get in the normal view. Or even b-roll from another video is fine. This isn’t family guy.(silly voice)
For new viewers: this video is perfect for both making a basic mead AND how to best use fruit in mead. There are other ways to do it, but this way I say you succeed in at least 99 times out of 100. A lot of good information.
I love the little B roll takes and funny asides. The B roll adds a little break, and is often informative. The humor in your episodes is what sets you apart.
Ironically one of my first good meads was a peach mead. I was worried the peach flavor wouldnt come forward so I just did ec-1118 and started it at 1.086 G and a pound of fresh peaches. Every ~10 days I just tasted it and if it wasn't peachy enough I racked it, added another lb of fresh peaches, and added another .5 lb of honey just to keep it active. After the 3rd rounds it was tasting super peachy so I pasturaized and back-sweetened. Came out perfect.
I like the flow of your videos. They are informative and entertaining. I think the light heartedness adds to the approachability for new viewers and keeps regulars coming back for more. At the same time, you address the do nots with out seeming overbearing.
I just want to add that my wife and I started this together. It has been a great date night, and we work together well. It is good for married couples to have hobbies together. The best thing is how you both have strong opinions and you each respect each other.
My own peach wine ended up at 15.6% thanks to 71-B, and I had some peaches fermenting in primary. Didn't use as much peach as you two did. Only had five large peaches to cut up, but it's turned out pretty nice. A good mid-range peach flavor, not too strong or weak, and some light shortbread flavor from being left on the lees for *a year* or so. Yes, I said a year. Only thing keeping it from being peach cobbler is a tiny pinch of cinnamon. Congratulations on making a great peach mead. Milestone achieved.
Watching this while drinking my first (but not last) homemade mead. Y'all were absolutely an inspiration for me. Thank you for putting this stuff out into the world. Cheers!
Re: B-roll. I think it is showing how far you have come as a channel that your editing, graphics, and additional angles and footage are more refined and diverse. Keep it up!!!
Congratulations on your successful peach mead! I’ve actually made a few peach meads now using purée in conditioning, instead of whole fruit. It dilutes the mead & drops the abv (I typically add 10oz of purée to 120 oz traditional mead), but the flavor is quite nice, it’s cheaper than whole fruit & less messy.
1 of my favorite memories is when we were kids we would go camping in Sulphur, OK. We would go threw Stratford, OK, and my parents would get peach wine after they drank it we would get the bottle with the peach mush in the bottom and eat it (without them knowing) it was awesome for a 12-year-old. Aaa good times. L9ve the show keep it up!!!
B roll ++ When I add Fermaid O, I don't bother to mix it with water or stir it in at all; by the next day, it's all dissolved in there without any messing with it. I think it's better that way because the yeasties have some time to get at the nutrients rather than needing to get to it all at once. So glad you've conquered your nemesis! The chamomile cider tastes a lot like cider, but I'm not really tasting the chamomile. I think it's my perception and not the actuality, though. Will bottle some time this week.
Hi Julie Im one of Brian & Derica's Moderators. I have some experience with Chamomile Meads and Ciders and would love to help brainstorm with you to try and get a better chamomile flavour profile for you
I enjoy you two just being yourselves. Just remember to have fun and we are all here to see you and Derica go on an adventure making mead and taking all of us along for the ride.
Your personalities is a large part of why I keep watching. You blend knowledge and humor well. If this was just science class I would get bored. Keep on keepin on.
Regarding the B Roll question - I love you guys just being you. Don't get me wrong, I love comedic interludes too, but from when I started watching it it was to get into brewing and as an informative piece. At the end of the day, if you want to put in more B Roll then do, I'm certainly not going to stop watching. And I will appreciate the extra footage / comedic interlude
I haven't minded the B roll. You all aren't doing it a lot and when you are it funny and adds to what you're saying. I mainly enjoy y'alls back and forth so as long as what your doing adds to that I'll be happy lol.
I come from a background where my father brewed and made wine but I never really learned. I stumbled across y'all's channel a few weeks ago which has me trying to work the nerve up to commit to the rest of a setup to start making mead/cider myself (I have an unused ale 'kit' that gives me most of the hardware at least). Y'all's channel is very reminiscent of many PBS shows (which I'm sure you were raised on too). So I don't feel anything needs to change with the way you make your content. I appreciate y'all.
Re: b-roll, when it's stuff like shots of the Gass bubbles, it's great! Oh and I really like how you've been showing the hydrometer reading. Most of the jokes and funny stuff doesn't need highlights. I get them!
I think the continued fermentation despite cold shock and stress might have something to do with the increased amount of yeast nutrient you started with.
These are your videos. It doesn't matter what we think but since you are asking, I like your videos. Especially since you have ALL the process included in one.
I appreciate the conversational flow and editing of your videos. I am subscribed to, probably more than I should be, a lot of YT how-to/crafting/homesteading and so on channels. Obviously I can't watch them all every single post/video they all make, but I do watch every single video you guys post. I'm not even brewing anything (yet!), so that should tell you something. It's because of how informative the videos are as well as your personality/charisma that both of you have as content creators. I like the b-roll. I feel like the edits are well done and in keeping with information and/or humor that you guys have and it zhuzhs up your videos in just the right amount. FYI, I say "gal" too Derrica! Hahaha. 💚
I was so happy to see this video today because I was looking for a peach mead video a couple weeks ago and couldn’t find one. Congratulations on making a good peach mead!
Hi! Thank you for your work. I have had brewing on my hobby dream list for years. Now I’m doing it! You’ve been a big inspiration for that. Im also a ~30 year veteran of the entertainment industry. I was mouth open agape when you asked about B-roll. I was already considering suggesting you use some brief B-roll to act as a transition buffer when you cut between long duration breaks. I.e.- when you finish mixing the must and you’re going to let it sit; add 30-60 frames of establishing video of the bubbles rising, mother forming and air lock bubbling. This will provide a sense of the passage of time and make the move to your next segment smoother (IMHO). Without them you have a feeling of a jump cut. Thanks for the continued inspiration!
I love both the simple edit and the more complex. I know it can get crazy editing for hours. I love b roll. But I also love leaving the (unedited) in the episode. Keep up the good work
We are contemplating the stock footage thing. We spend quite a bit per year on those and wondered if they were worth it. From the responses... no. Making our own is more beneficial.
I enjoy the little bit of comedy in your vids, both naturally conversational (TRBOS, calculator teachers said you'd never have) and the graphics (poof with spoon of unusual size). Also thank you so much for the links to buy the materials🥰
You do you guys. Love your videos as is. And on a side note, I am currently deployed here in Florida with FEMA helping with hurricane relief. Waves to you from the panhandle! And if you EVER wanna make Thwackicus the mascot that reminds everyone to, "Thwack your packet"... I'd think that be so awesome.
New subscriber, I was looking how to make mead and I stopped on your videos and subscribed because of YOU GUYS! Personality of the content creators, and the content, is what draws me, SO be you guys, not something you think will make everyone happy.
You're videos are perfectly great. Y'all have a great flow & personalities. It's like I'm sitting around talking with friends about mead. I enjoy your videos as you produce them that is definitely what makes them uniquely yours. From viewer perspective it feels like y'all already put a proper enough amount of thought into where/how/what b-roll y'all drop in that as a viewer it becomes a nice seemless flow. There truly isn't much break in the "essence of the video" for me it all adds that little bit that makes it one great video (ALWAYS love reading y'all's shirts!!) The VIP clip in this one was a little commercially but that's not a negative! I want y'all to get all the money so y'all can keep doing a great job!
I've brewed some with peaches in the past, and I have found that using apricots instead of peaches actually makes a more "peachy" flavor after fermentation. Really work trying
today i just racked my blackberry, cranberry, elderberry wine and its amazing. i used lalvin 1118 and fresh blackberries and a elderberry/cranberry wine i found at nob hill. big fan of your videos. keep up the awesome work
I'm just an italian guy that tries to kill time watching your videos, and trying to learn something for a future mead brewing (when the planets will be aligned).. And i love how you edit your videos!! Please keep it going this way!!! 😁😁
Great job 👍. I've been adding peaches to my apple cider and wine as a flavor enhancer. It seems to be a flavor many people enjoy. The underlying taste in peach is a "pucker" and it's what's missing in most artificial mixes. And I agree with many others, if you go too sweet, the peach taste will diminish 😁👍❤️
In response to your question. I think your production is masterful. I would not change a thing. My wife just has heard you while I am watching your videos and she said "He is really funny. like a comedian"
I've been watching your videos for a few months now. You guys are great teachers, and you remind me of my family members. I'm finally going to branch off and experiment on my own. Attempting to make a Turkish delight mead.
I don’t mind the extras, but don’t think they are necessary. The amount of extra clips you have added in the past has been fine. Your personalities is what really makes the videos good for me.
Currently in the process of making this mead. Initial fermentation is complete as of a week ago! I will be adding the peaches tomorrow. I'm excited to taste this one once it's finished 👏🏼
I enjoy some of the B roll, like the B Roll of the bubbling from the fermentation. It allows me to see what you are seeing and understand what is going on better. I think you know when the B Roll is appropriate, such as the bubbling. But it is ultimately your channel, which I enjoy.
I just want to thank the both of you for introducing me to this wonderful hobby! I have several recipes now thanks to you! 8 people got to sample my last batch of mead, and all of them loved it, even the one who went to a renaissance fair and had the ten cup sampler, and didn't like a single one of them!! ❤❤❤ Thanks again guys!
I really need to start brewing my own! But i also enjoy watching your videos. I like the amout of b-roll you have at this point, especially the pour cam! Thanks for another relaxing Sunday morning.
I started my first brew then I found your videos I actually wish I would have found them first but I am thoroughly enjoying them especially the commentary and b-roll thank you for the entertainment and the help looking forward to the next one
Thank You So Much! You both are great. I just started my first batch on 9-30-23 at 11pm 1 gallon. Basic mead with french medium toast wood honey spring water black tea and orange granules. Second batch is 3 gallons of the same but minus orange granules. But i am seperating to three seperate gallons. 1 peach 1 pineapple 1 bluberry after fermente and pasteurization.
Something you might want to look into and try for tannins far as tea goes is Lipton makes a really good instant black tea with no added flavorings like lemon etc and no added sweetener. It makes a really good sweet tea which I use it for and hot tea. When you taste just the powder it has that pucker factor like I heard you describe tannin... I get it from Walmart and it comes in a makes 30 quarts size glass jar.
I watch your videos because of you! You both, together, are able to explain the process and convey your own take, I have learned so much from you both. Don't change, I am a nube and watch your video's because they are enjoyable AND I am inspired to make my own mead. Whatever you do, I will still watch.💗💗
I like the graphic b-roll, like the chalkboard ABV one. I also like the b-roll of the fermentation bubbles and other times you use the phone from your pov. I personally don't think you need random video clips that are from outside sources. Unless it makes a point that you can't otherwise. I am amazed that these videos take weeks (months) to produce, and that you are doing multiple brews all the time - and filming them so we can see the whole process. I have made videos most of my life and your patience is really great. Also I like the editorial punch in's to show reactions. It demonstrates to me that you have a high resolution camera to do that. They look very good.
I’m new to your channel and currently getting supplies to produce homemade wine. I tried some homemade pear wine that a friend’s father made back in the day. He used Bartlett pears from trees he had on his property. This was hands down the best wine I’ve ever had in my life. I’m 58 years old 😂
I really like the conversational style as you take us on the journey of making. I'm still dying for an updated consolidated printed cookbook as a companion to these long-form videos. You've learned so much and improved your techniques so much over the years that blindly following recipes even 18 months ago may not get the same product as following a newer video. As for B roll, if it's illustrative then drop it in but I found editing my own videos that when I tried to put in a bunch of b-roll and make a really polished video, it like quadrupled the time in editing and did not quadruple the audience satisfaction!
@@CitySteadingBrews I've got a technical writing and graphic design background. Hmu if I can chip in. Thanks for all that you do! Would also love to see y'all at brewing conferences. I'd totally drive from SC to attend one.
Hello guys, this looks like something I really want to try. I really do appreciate the level of information that you guys offer, not only do I really enjoy watching your videos, very funny and you both definitely compliment each other which makes for easy watching, it’s so interesting for me. I’m continuously learning while enjoying myself. Thanks for all your efforts. 🇦🇺
I like your B-roll, I think it livens up the video. I like that you're informative, creative, funny, and charming all at the same time. Your B-roll contributes to being both informative and funny. I definitely don't think it would be better to just have the one shot of you guys with minimal editing, but I don't know how I'd feel about more heavily edited videos.
I like what y’all are doing the comical is great and levity is awesome and cheerful attitude y’all have is what attracted me to you video and to become a vp. Y’all doing fantastic I’ve learned so much from yall
My experience with peach mead or peach wine, is that it is easy to go too sweet, almost sickly sweet. However, I've found that amburana can add a little more depth to the flavor and dial back the sweetness.
I actually have a current peach mead on my counter now, that I rough racked the peaches out. You two choose wisely by adding the peaches after primary fermentation. I added the peaches in primary and due to the CO2 production it caused the peaches to float and basically exploded out. Mine also went to 17% using EC-1118. I also added 1 cinnamon stick to mine, and used peach black tea from GA.
For my last 8 brews, I have been only using "O", and I have been batting 1000 by adding (per gallon) 1/2 tsp in the beginning, 1/2 tsp at 48 hr. and 1/2 tsp at 96 hr. A little more of a pain, but no fails as of yet. Not technically Tosna 2.0, but similar enough.
I had an experience with peache wine too. Set the must for 18% +.015 extra for sweetness. Used premier cuvee and ended up at 20.3%. I think yeast love peaches. Never had this happen with any other fruit.
After the 5 points, there was another 8 point drop though, so I guess roughly 15.5% before the backsweetening 😉
Really like the videos, hope to get starting on some own brewing 😁
Try making it once with White peaches sometime, totally different flavor
We backsweetened it then the measurement between where we sweetened it to and where it ended was calculated for the ABV %.@@alexlarsen6413
"using the calculator the teacher said I have never have handy" never gets old 😂. My teacher(s) said the same. One of my favorite phrases 🤣
It definitely gets old but I tolerate 😂😂😂😂

We are contemplating the stock footage thing. We spend quite a bit per year on those and wondered if they were worth it. From the responses... no. Making our own is more beneficial.
I enjoy the little bit of comedy in your vids, both naturally conversational (TRBOS, calculator teachers said you'd never have) and the graphics (poof with spoon of unusual size). Also thank you so much for the links to buy the materials🥰
A little comedy is always fun, you're videos are great! Don't go changing 🥂
That amburana wood did some interesting things with that cooked peach note. Could always try a little in a single bottle.
New subscriber, I was looking how to make mead and I stopped on your videos and subscribed because of YOU GUYS! Personality of the content creators, and the content, is what draws me, SO be you guys, not something you think will make everyone happy.
Thanks for that!
There truly isn't much break in the "essence of the video" for me it all adds that little bit that makes it one great video (ALWAYS love reading y'all's shirts!!)
The VIP clip in this one was a little commercially but that's not a negative! I want y'all to get all the money so y'all can keep doing a great job!
I love the comic and words added. They've been useful if I can't catch the words you guys say.
I've brewed some with peaches in the past, and I have found that using apricots instead of peaches actually makes a more "peachy" flavor after fermentation. Really work trying
today i just racked my blackberry, cranberry, elderberry wine and its amazing. i used lalvin 1118 and fresh blackberries and a elderberry/cranberry wine i found at nob hill. big fan of your videos. keep up the awesome work
i like exactly how you do it now with some of the semi comical and B-Roll. I am learning a lot and getting more and more confident. Love the videos!
Just turned 21 this August. Can't wait to make this mead, I love peaches
love this channel taught litteraly every thing i know about mead so far lol and ur comedy is great do what makes u happy
Thanks for watching :)
In response to your question. I think your production is masterful. I would not change a thing. My wife just has heard you while I am watching your videos and she said "He is really funny. like a comedian"
Wow, thank you and tell your wife thank you as well!
I've been watching your videos for a few months now. You guys are great teachers, and you remind me of my family members. I'm finally going to branch off and experiment on my own. Attempting to make a Turkish delight mead.
Good luck!
Keep it just the way you’re doing it in this video!! Love the conversation and banter back and forth.
I like your mix of A-roll and B-roll.
You strike the Instructional and entertaining balance very well.
Love the b-roll and the comedy additions to your videos! Keep up the great work
Thanks!
How you guys do things in this video is solid. keep up the good work.
I like the videos as they are. I just mixed up this batch. Looking forward to trying. Thank you Brian and Derica.
I like the way you edit the videos as is, any B Rolls should be of you two and no one else.
❤❤❤
Thanks again guys!
Cool! You are welcome :)
@@CitySteadingBrews 😂 edited my typos. I'm not a cannibal!!! 😂
I really need to start brewing my own! But i also enjoy watching your videos. I like the amout of b-roll you have at this point, especially the pour cam! Thanks for another relaxing Sunday morning.
Awesome, thank you!
I started my first brew then I found your videos I actually wish I would have found them first but I am thoroughly enjoying them especially the commentary and b-roll thank you for the entertainment and the help looking forward to the next one
Thanks! Happy to help.
I love your videos the way they are. They're what got me into making mead❤
The last peach mead I started the peach ferment two days before with the pectic enzymes, yeast and nutrient.
Love you two being yourselves and b reel stuff is fine too.
I think you two do you....that's what we have all come to know and love.
Col
Something you might want to look into and try for tannins far as tea goes is Lipton makes a really good instant black tea with no added flavorings like lemon etc and no added sweetener. It makes a really good sweet tea which I use it for and hot tea. When you taste just the powder it has that pucker factor like I heard you describe tannin... I get it from Walmart and it comes in a makes 30 quarts size glass jar.
I will check it out, thanks!
I watch your videos because of you! You both, together, are able to explain the process and convey your own take, I have learned so much from you both. Don't change, I am a nube and watch your video's because they are enjoyable AND I am inspired to make my own mead. Whatever you do, I will still watch.💗💗
Thanks!
I like the way you guys do your videos keep it up
I like the comedy! Keep up the B-Roll and even go to the C-Rolll.
The book will come in time. That is a huge project.
@@CitySteadingBrews I've got a technical writing and graphic design background. Hmu if I can chip in. Thanks for all that you do! Would also love to see y'all at brewing conferences. I'd totally drive from SC to attend one.
I love your videos when you're just being you. I don't think it needs anything added.
Thanks for being super inspiring for a 1 Home brew kitter here! Thank you!
Fantastic. Glad you enjoy our content.
Love seeing the video additions.
Thank you Trent!
Please keep them the way they are, love the videos.
Thank you for the videos. Just set up my first ever home brew using this as my pattern! Fingers crossed and now we wait!
Love the B-roll like this. Keep doing it ❤
First video I've seen of you two and I watched it to the end. Very fun, informative and educational.
Glad you enjoyed it!
My experience with peach mead or peach wine, is that it is easy to go too sweet, almost sickly sweet. However, I've found that amburana can add a little more depth to the flavor and dial back the sweetness.
I no longer drink alcohol, but I still like watching your videos
Well thank you.
I think the content is great! the humorous stuff is great as well as the technical stuff and yes you guys are fantastic as well. leave as is i say.
No change is the best change. Keep up the good work.
I just enjoy seeing you guys do your thing.
Also enjoy your content have learned a lot and have copied several brews. As I have picked up this hobby in the last 2 months.
Happy to help!
Try a bigger primary vessel. And stir daily.
@@dominic_a yep currently only have the 1 gallon fermenter definitely need a couple of the large mouths
Got a kot of peaches of our tree this year in the freezer, may have to give this a shot!!!
2:29 You can get screw cap for those carboys; it's a lot safer and easier than a bong you have to hold while shaking.
I had an experience with peache wine too. Set the must for 18% +.015 extra for sweetness. Used premier cuvee and ended up at 20.3%.
I think yeast love peaches. Never had this happen with any other fruit.
Making murky mead since 20xx? 🤣 Great video I want to drink it!
