    Great video! Another option I enjoy is ambient brewing: steep sencha at room temperature for a couple of hours and then pour it over ice. It's essentially a faster cold brew with a slightly different flavor profile.

    Love this comparison! It's been my observation also that cold brew tends to be more heavy on the umami profile, sweet and full bodied. Also, fair warning, similar to cold brew coffee it is surprisingly strong on the energy kick side of things :)
    And a little secret third option that my friend (a tea afficionado and owner of a tea room) showed me: letting ice cubes melt over sencha.

      This one is actually from an aliexpress brand called fuego. I think timemore also makes a similar sized one

    What I often do is brew a hot pot of tea and when finished pour cold water over the leaves and stick it in the refrigerator for a cold brew the next day.

    How about brewing a normal cup of sencha, letting it stand in room temperature to cool off for a bit, then putting in the fridge for the following day? This would have the same consistency as a hot cup but cooled. I often do this when I can't finish the second or third cup of hot tea.

      To be honest, I don't think I've actually tried this yet! I'd worry a bit about oxidation, but I'll have to give it a try

    What is your opinion on ice brew ? I personnaly love it when it's really hot, otherwise it takes too long for the ice to melt

      Ice brew/kooridashi is great, but my main issue with it is getting good tasting ice! In the past, the ice from my freezer tasted off so I'd buy ice just for ice brewing
