    INGREDIENTS:
    2 Tbsp olive oil
    ⅔ cup celery stalks, chopped
    ½ yellow onion, chopped
    3 cloves garlic, smashed, peeled, and minced
    1.5 tsp sea salt
    ½ tsp ground black pepper
    1 Tbsp fresh oregano or 1 tsp dry
    ½ cup basil leaves, roughly chopped
    1 28oz can crushed tomatoes (4c heirloom tomatoes instead of canned if in season)
    4 cups chicken bone broth
    1 cup heavy cream
    ½ cup packed basil, chiffonade
    1-2 tsp flaky sea salt as needed
    DIRECTIONS:
    In a large stock pot heat and add olive oil, celery, onions, and garlic. Sauté the vegetables for about 3-4 minutes then stir midway through add salt, pepper, oregano, and tomatoes. Then sauté another 3-4 minutes or 6-7 minutes if using fresh tomatoes. Once moderately caramelized, add bone broth and roughly chopped basil. Bring broth to a simmer and keep at low simmer for about 8-10 minutes to marry flavors.
    Blend in batches or with hand held immersion blender. Return pureed soup to pot and stir in heavy cream at low heat. Add salt and pepper to taste. Once balanced in flavor serve into bowls and add chiffonade basil with a pinch of salt into each bowl.
    Makes 8 servings of 1½ cups each
