You can edit STL files in FreeCAD! Yes, FreeCAD can edit STL.
If you only have an STL file and want to edit it, you can do that in FreeCAD.
First you have to import a simple and clean STL file into a new document.

Then select the STL file, go to the 'Part' workbench and click on the 'Part' tab. Select 'Create shape from mesh'. I couldn't discover visual differences between 0.10 and 0.80 and left it at 0.10. It has something to do with tolerance.
You can delete or make the old files invisible if you want.
Click on the 'Part' tab again and then click on 'Refine shape'. This makes the flat surfaces become less detailed. Click one more time on the 'Part' tab and click on 'Convert to solid' to make the object massive instead of hollow.
When you have created a shape you want to cut out of the original shape, select the original object first. Then select the part you want to cut out and click on the 'Make a cut of two shapes' button.
⚠ This method worked with a clean and simple STL file. Some steps are unlikely to be performed with the wrong STL files.

I am new to FreeCAD. I know nothing about FreeCAD. I watch the video, follow along on my computer and I take detail notes for reference. I have to watch the video repeatedly to write down the detail. I finally can do something similar in the video, I cut a part of of any existing STL and save it as a new modified STL. I even print it out on my 3D printer successfully. Here is the detailed step by step on how to do it.
    1) Open the STL file to load the file into FreeCAD.
    2) At the Work Bench drop down menu, select Parts.
    3) Select the part you imported on the Combo View Panel CVP) on the left of the screen.
    4) Click on Part on the top tab. Click on Create Solid from mesh.
    Enter Tolerance (default value)
    5) Select the newly created object (meshed solid) on the CVP.
Click on Part (top tab) > Create a copy > Refine Shape. This removes mesh lines.
    6) At the CVP, right click on all old object to invisible (toggle visibility)
Select the newly created object by the Refine Shape on the CVP from the step 5.

    7) Select the surface that you need to change (cut).
    8) At the Work Bench drop down menu, select Sketcher.
Click on the Sketcher button (Red square & circle), Name the surface when prompted.
Use the Sketcher tools to draw the shape you need to add or cut.
    Adjust the size according.
    9) On the CVP, select the sketcher object and the surface. Hold the Control down to select the second object.
    10) Click on the Work Bench drop down menu and select Part
Click on the Extrude button on the tool bar (blue square block with up arrow)
On the CVP, change the Length Along to make a 3D object (cube, cylinder..etc)
A + value goes outside the surface. A - value makes the object into the surface
    11) At the CVP, Select the original object and the extruded object by hold down the CTL key.
At the Work Bench drop down menu, select Part
At the tool bar click on the Cut button (White Circle over a blue Circle)
The extrude object now is cut off from the original object.
    12) At the CVP, select the resulting Cut object
At the Work Bench drop down menu, select Part > Convert to Solid
    13) At the CVP, except the the resulting Cut Solid object, select and delete everything else.
You now end up with the object you want.
    14) You are now ready to export the revised object as a STL file.
Select the final object at the CVP
    Click on File > Export
    Enter a file name
Click on the Save as type drop down menu and select the file type you want to export|.
Or select STL mesh and export the object back to STL.
    Have fun!
