I did some research on the need for "output/run" or "balancing" capacitors (the question I posed in the video). As I suspected, they can be used to fine tune the phase angle of the three phase output (as reflected in the P-P voltage and phase currents), particularly the generated phase. I also came to understand that the need is increased if the load motor uses more than 50% of the rating of the idler/pony motor (e.g. Load motor is 2HP and idler is 3HP) and/or requires a lot of start up torque (like an air compressor). My strategy: I intend to monitor my motors-under-load and see if any issues (heating, noise, under power) are observed and add if necessary. Remember, my envisioned loads are almost zero start up torque required (like the surface grinder). Make sense ?
