    Lol my mom is the same way...doesnt measure anything. She wrote me a Cambodian cookbook but there's no measurements!! Please make more Filipino food :)

    This dish reminds me of a Korean dish called samgaetang. It has chicken, rice, ginger, onions, ginseng, and jujebes. You should try it out, April! It apparently has health benefits too!

    I would brown the chicken in the same big pot where it’s all made. That way you get all that flavor from the chicken-then take it out, throw in the onions and deglaze YUM

    Hi April. Thank you for sharing this! I'm a Filipino and I make this all the time for my kids. I can suggest that instead of using campbells chicken broth you can just boil chicken wings/thigh with a little bit of salt, pepper and ginger until they are cooked. Then proceed to saute garlic, onions and ginger. Add the chicken and continue to cook until the chicken is slightly browned. Add your broth and let it simmer. Then instead of using regular white rice, you can use the rice variant we called "malagkit" or sticky rice. It gives the arrozcaldo the thick and soupy consistency. Wash it first before putting it directly to the simmering broth. When the rice is cooked you can then add patis and seasoned it as desired. You can eat this together with the hard boiled egg and fried tofu on the side. 😊

    My mom is the same!! Measurements just don't exist!! So I'm eyeballing everything so close and tasting my every move it's to funny. Could you do Desserts? Of course I gotta subcribe!

    That's so funny! My mom is the same way when I try to learn her recipes. I've learned to just watch her every step and take down notes. She taught me to make pancit, adobo (pork & ckn), miki soup, pinakbet, & marungai soup. I'm from Hawaii, so we have our own version of Filipino food. When we moved out here to CA, I've noticed the Filipino food is way different out here, but pretty similar.

    Can you use jasmine rice instead of white rice? Or Basmati rice? We don't cook white rice, but I want to try this recipe! Looks so good!

      Devi Seecharran Gibson you can use any white rice!! I’ve tried with plain, jasmine, and basmati it all turned out the same in the end

      Jasmine rice is white rice.. you can use that better than basmati

    My Aunt is the same way. Throw a little of this and a little of that and SHAZAM!!! You have your recipe!! LOL. I had to literally sit her down, have another aunt's recipe for homemade rolls (for a cook book) and question every measurement and ingredient. But I got it........maybe one day I'll try it!! lol

    😂 my mom is the same way! She’s in AZ and I’m in LA, whenever I fly her over to visit I sit there and watch her cook, she’s gotten better about “measuring” while she cooks to give me an idea, and if she needs to add an additional tablespoon or two to adjust the taste then she’ll tell me and I SEE her doing it and write it all down. That’s how I learn Vietnamese dishes from my mom lol.

    Here’s how i make my no fail arroz caldo all in the same pot, sautéi ginger, garlic, onion, add & cook chicken thighs until no longer bloody, add raw rice (typically glutinous rice or malagkit), add patis, mix then add enough broth/water then simmer until rice is cooked. Mix periodically & add broth/water to get the soupy consistency. Then add ground black pepper & also some saffron (kasubha). Serve in a bowl with chicken, hard boiled egg, scallions, fried/roasted garlic on top & a squeeze of calamansi. Perfect comfort food for my family especially during sick days 😊

    For easy but fantastic pancit, in one wok, sautéi garlic, onion, shrimp, shredded chicken (use left over rotisserie), carrots, snow peas, cabbage, add oyster sauce, mix then simmer for 2-3 minutes till veggies are half-cooked, set aside in a large mixing bowl. In the same wok, pour home made shrimp broth (secret ingredient, include ground shrimp shells to add more flavor), add oyster sauce again, soy sauce & patis. Make sure you have enough liquid (my rule of thumb, 1cup of liquid per slab of pancit bihon or canton). Let it boil then add & simmer bihon first (about 3 minutes) then add & simmer bihon (about 3 minutes again). Then add half of the veggies & mix until well incorporated. Then add black ground pepper. Then transfer to serving dish then top with the rest of veggies. Serve with calamansi or lemon. 😋

    I saw eating this during your vlog when you first gave birth to Jacob I was pregnant at the time and I went home made recipe you linked I have been hooked since. I tried with turkey thighs first cuz I am not a big fan of dark meat chicken but it’s actually so good 😊 with chicken thighs

    You can also mix calamansi (filipino lime) or lemon and patis before eating the arroz caldo. It just add more taste to it. Hope you can try it. 😊

    Hi April, looks soooo good!!!! Just one question: What type of white rice are you using?
    I mean you use a cooked rice and then cook it for other 20 minutes, is it a parboiled rice or you have to pass the cooking of the rice?

    My mom is the same. Whenever colleagues or friends ask me for recipes, I'm like well I can tell you the ingredients but there won't be measurements. :D And I feel like I'm the same with cooking, I don't measure anything, I just go by eye and taste.

    Looks good. My dad fries up some garlic that we sprinkle on top and then we put some soy sauce for seasoning. My parents use a light broth and mostly water. It's delicious. And by the way, patis is not a brand :) it's fish sauce :)

    I love chicken adobo, I cook it all the time for hubby and Im not even filipina. I can cook all different dishes and I enjoy cooking them.❤️ april I'm the same way I do measurements as well. 😂
