I would brown the chicken in the same big pot where it’s all made. That way you get all that flavor from the chicken-then take it out, throw in the onions and deglaze YUM
Hi April. Thank you for sharing this! I'm a Filipino and I make this all the time for my kids. I can suggest that instead of using campbells chicken broth you can just boil chicken wings/thigh with a little bit of salt, pepper and ginger until they are cooked. Then proceed to saute garlic, onions and ginger. Add the chicken and continue to cook until the chicken is slightly browned. Add your broth and let it simmer. Then instead of using regular white rice, you can use the rice variant we called "malagkit" or sticky rice. It gives the arrozcaldo the thick and soupy consistency. Wash it first before putting it directly to the simmering broth. When the rice is cooked you can then add patis and seasoned it as desired. You can eat this together with the hard boiled egg and fried tofu on the side. 😊

She taught me to make pancit, adobo (pork & ckn), miki soup, pinakbet, & marungai soup. I'm from Hawaii, so we have our own version of Filipino food. When we moved out here to CA, I've noticed the Filipino food is way different out here, but pretty similar.

I had to literally sit her down, have another aunt's recipe for homemade rolls (for a cook book) and question every measurement and ingredient. But I got it........maybe one day I'll try it!! lol

She’s in AZ and I’m in LA, whenever I fly her over to visit I sit there and watch her cook, she’s gotten better about “measuring” while she cooks to give me an idea, and if she needs to add an additional tablespoon or two to adjust the taste then she’ll tell me and I SEE her doing it and write it all down. That’s how I learn Vietnamese dishes from my mom lol.

Mix periodically & add broth/water to get the soupy consistency. Then add ground black pepper & also some saffron (kasubha). Serve in a bowl with chicken, hard boiled egg, scallions, fried/roasted garlic on top & a squeeze of calamansi. Perfect comfort food for my family especially during sick days 😊

In the same wok, pour home made shrimp broth (secret ingredient, include ground shrimp shells to add more flavor), add oyster sauce again, soy sauce & patis. Make sure you have enough liquid (my rule of thumb, 1cup of liquid per slab of pancit bihon or canton). Let it boil then add & simmer bihon first (about 3 minutes) then add & simmer bihon (about 3 minutes again). Then add half of the veggies & mix until well incorporated. Then add black ground pepper. Then transfer to serving dish then top with the rest of veggies. Serve with calamansi or lemon. 😋
I saw eating this during your vlog when you first gave birth to Jacob I was pregnant at the time and I went home made recipe you linked I have been hooked since. I tried with turkey thighs first cuz I am not a big fan of dark meat chicken but it’s actually so good 😊 with chicken thighs

I'm Hispanic and it's the same way in my family!! My grandma made the best Spanish rice but never measured anything or wrote down the recipe and I still can't get it just right!

Looks good. My dad fries up some garlic that we sprinkle on top and then we put some soy sauce for seasoning. My parents use a light broth and mostly water. It's delicious. And by the way, patis is not a brand :) it's fish sauce :)
