I haven't had any truoble with boil overs, boiling at altitude. My boil rolls at 203-204. I'm starting with 11-12 gallons of wort in a 13 gallon capacity 240v system, too. There is head space, but not abundant headspace doing double batches, but it doesn't seem to be a problem, especially with lighter bodied beers.
I keep a bowl of ice cubes next to the brew kettle just in case, a cube or two will drop that cap right down. I also keep a wooden spoon over the top edge of the kettle as a backup. Not usually an issue for me, but good insurance.
I have a sentinel - they used to be sold by NB. I've needed it twice in 5 years. I tend to "sneak up" on my boil...so I've never had a full boil over. Great points though! I use the sentinel mostly to also drain my bag back in the kettle or a bucket.
I wasn't sure what that was at first, but found a video on it. ua-cam.com/video/FZv6qPetsoA/v-deo.html That seems like a nice piece of equipment and a smart way of using a device, but sadly it doesn't look like anyone is still selling it, or maybe my google search terms just suck.
😂🍻Been there, and done that. It does help, but if you've got the temp cranked up to 100%, it doesn't help that much. As you may have noticed in one of the background videos, I was spraying, stirring, and even dumping in some wort drippings from the pulled mash. I think I finally dropped some defoamer in that brew to get it under control.

Great advice, as I my beer fridge has ice that is deionized which would work great.

I remember standing there, with the spraying bottle, spraying like crazy and the wort just didn't care. Big mess.
