Smoked Turkey is one of my absolute favorite things to cook. A UDS is oneof the best ways to do it. I’m going to rebuild my UDS this week. Cutting it in half seemed like a good idea. Great helper you had there.
DAMN Chef Johnny!.....you're left-handed just like daughter Jacklyn LOL 😂😂..... I make fun of her all the time I get scared she uses a knife although she uses it the correct way because she does basic cooking class in school I'm more lightly to cut myself never had a cooking class i my life LOL. Oh thats definitely a pretty looking Bird and I guess Thanksgiving came early this year do have a wonderful weekend you and your family. P.S I hope you're sticking to your diet you know you've got that goal to achieve keep at it my brother.

Nice, since I'm almost always cooking Turkey for customers I've never cut one in half but I have one in the freezer that this might work on!
Try it you'll like it. It will cook faster and more evenly. Just take out that backbone and the breast bone.
