The visual argument is the only important one in my view. Catholicism's iconography being so much more elaborate and ostentatious than any other Christian denomination, and visual shorthand is important. It's the same reason why a Rabbi in a movie will almost always be an orthodox Jew with the beard and hat, etc.
There's also the fact that the Catholic Church has popularised itself in certain ways, especially regarding exorcisms that the Vatican endorses as a real thing, so when doing a story about devils and demonic invasions, Catholic priests are the first thing you're going to go for as not only is it visually more interesting to have someone in an elaborate robe battling demons, but the stereotype is very well known.
The best demonstration that the use of Catholicism is primarily due to visuals and their established reputation for supernatural dealings is the use of Catholic imagery in fictional religions in properties like Warhammer 40k and Warcraft. While those are various forms of games, they demonstrate similar reasons for their use in movies, I think.
In both cases they have no connection to real-world religions, one being the worship of a god emperor and the other worship of the vague magical holy light. Yet both heavily use Catholic styled imagery for their churches, priests and everything from righteous paladins to battle nuns. There's just a lot of imagery that you can have fun with visually.
