How to cook a NEW ZEALAND HANGI

  • I cooked a Hangi (a traditional underground earth oven) this week and roasted potatoes, kumera, pumpkin and cabbage with some wild pork and Lamb. This was my first attempt and it went well, I used all natural resources and filmed in the beautiful New Zealand forest.

      Thanks mate! I was pretty scared I would muck it up so I’m super stoked it came out the way it did. I’ve always loved hangis so now I think I’ll do them on a regular basis. Cheers for watching mate

      I’m doing another one the next long weekend, so I would love to try to make a steam pudding and add more to the Hangi now I know I can do it.

      Believe me, neither did I hahah. I just wanted to see if it would work and that's kinda what I'm about winging it and seeing haha. Now that I know the iron bars I used kept their heat I probably won't use charcoals again

    Good onya bro. I like people who try and do. Glad you didn't cover the dishes with foil otherwise you wouldn't get that hangi flavour and smell.

      Thanks my friend! So kumera is kind of what you would call “sweet potatoe” I guess. It’s in that family of vegetables like potato’s but it’s way larger and harder, and sweeter than a potato. And has a few different colours too.

    Try doing a hāngi without any herbs and spices next time.. it over powers the unique earth taste a hāngi is known for..
