A haggis is basically a type of sausage. The sheep's stomach is only used as a casing to hold the minced organ meat*(mixed with lamb or beef suet, oatmeal and seasonings) together during cooking, you don't eat the casing you just slice it open after it's cooked and remove the edible contents. * sheep's heart/liver/lungs(aka the pluck). It sounds offal(get it?) but it's honestly not that bad, it just tastes like a highly seasoned meatloaf, very savoury.

Haggis is normally eaten with mashed, buttered potatoes, and mashed peppered turnip and the overall taste is a slightly peppery, buttery taste with a slightly grainy texture. It's delicious, and most people would love it if they were used to eating it. People in Scotland have been eating it since centuries. Its just normal food and don't give it a second thought. Before Mackies ice cream and Taypack potatoes went into partnership to start making crisps, I worked in economic development for Scottish government agency and we had been helping the company develop the idea with financial grants and business support ideas and advice. Their “account manager” from my organisation assigned to work with the company came back to our office from an early visit when the idea was still in its infancy and told us the company was looking for flavour ideas with a Scottish angle. The usual suspects of haggis, Aberdeen Angus steak, Ayrshire ham, cheese, Scottish seafood, sea salt etc were suggested, and thinking of the still quite new flavour of sweet chilli, I suggested Scotch Bonnet. Not just a chilli, but a chilli with a link of sorts to Scotland. The account manager took those ideas back to the company and amongst others, they went with Scotch Bonnet. Now other people probably suggested a chilli flavour too, and some might even have hit upon the “Scotch” link too, but I certainly did and I am claiming the honour of being the innovative person who came up with the idea.
