TheMudbrooker's Guide to Cast Iron: Roast Pork with Honey Cayenne Glaze.

  • Recipe for the glaze:
    2 cups brown sugar
    1 cup honey
    1/2 cup Dijon mustard
    1/4 cup cider vinegar
    1 1/2 tsp. ground ginger
    1 1/2 tsp. ground cinnamon
    2 tsp. ground cayenne pepper
    Combine ingredients in a saucepan, bring to a boil and simmer for five minutes. Glaze the meat last half hour of roasting.

    Made this last night. What an amazing, simple and delicious meal. I will be making it again. It wasn't too spicey for my wife and kids. approx. 5 hour roast. 13 qt Magnalite roaster. I used a trivet and did not see much difference if I did.not use one. Goes well the next day with eggs!😊

    Awwwwwwsome Mud. I've never ever seen a glazed roast. Dutch oven,,, here I come. This will feed my Football watching group in 2 weeks. I love that roaster. I changed my mind. You SCORED BIGG TIME!!! Well worth EVERY DIME. Congrats. I clown but heard instructions, USE MY TRIVET. Thank you.

    Couldn't stand it...had to make it! Tomorrow I'll take the big ($1.77 lb/8# - 1/16/22) pork butt out of the 4-wheel frig. (truck) 30 Degrees out there and it is enjoying the back seat til morning. Dutchy waiting on the range. Can't wait! Only change...sweet tatters instead of spuds - had lots on hand. Might add an onion or two - chunked up. If I get a wild hair, I might throw in a can of pineapple chunks or just apple chunks towards the end. I have watched this twice, Mudbrooker, great video and it hooked me good. Do really enjoy your content since I love my wood cook stoves and piles of beloved cast iron. You might try the roast with sweet potatoes and thicken the juice with a little cornstarch instead of flour. Cornstarch makes a light 'gravy' that does not muffle the flavor of a light sauce.     Wonderful recipe (plenty for leftover hot pork sandwiches). The roaster is a beauty. Lifting that every day kept grandma fit as a fiddle!

    There is barbecue in my home town that is always dry. I don't know how they do it so consistently! A genuine thank you for the cast iron education.

    Lisa recommend that we check you out o my word seriously that's is a meal fit for a few people would like to have a big roster like this one but i just have a medial one with a rack in the bottom i definitely will keep my eye out for a few i think that would be very good to have would probably get a few great meals out of this

    Beef is crazy here! I just went to the store yesterday and it was over $6 a pound eeeek!

      Beef has been high around here too, but not as bad as some areas. Roasts and ground beef are down, not quite back to normal, but down. Steaks and popular grilling cuts should come down as summer winds up.

      I would think it would take a 16-18 pounder no problem, maybe bigger.
