In scenario no. 3 when MX record is pointing to EXCH; is Centralized Mail Transport enabled? I want all mail to go in/out of on-prem EXCH; at least for a while until we get our mailboxes migrated...
IN third scenario, one mail will be sent to EOP and delivered to the Exch Online mailbox, first email is getting delivered to Onprem directly without even scanning by EOP? does it happens?
In centralised mailflow, routing email through onprem is nothing but a edge transport server or it can be a third-party mail filtering service, right??
So, if the MX record is pointed to On-Prem and Centralized is enabled, there will be no EOP filtering for the recipient who's mailbox is residing in On-Prem server?
i believe u missed a point to mention, irrespective of Centralized/decentralized outbound emails send from Onpremise user will be send through Onpremise server only.. anyway content is good :) Please have a video on email flow between Onpremise and online user on same hybrid environment

You can either use Exchange Server or Edge Server as a smart host (that will be receiving emails).
