Because they legally don't have to. The time frame for copywritten work is like 60-something years. Those classical composers have been dead for hundreds of years. I'm a musician and most artists who sample have to put them in liner notes because the artists or producers they sampled from are still alive or haven't been dead very long. That's why Robin Thick and Pharrell got sued over "Blurred Lines."
