I would say for next time to focus on tightening up the cook on those mushrooms! You turned them into a paste in the blender which isn’t what you want. You still need some structural integrity to them. And when you cook them, don’t focus on the amount of time you are cooking them for, just cook them until ALL the moisture is cooked out of them. That’s why your Wellington was so wet at the bottom when you sliced it!
Good job Quang Tran! I've made many Beef Wellingtons and other variations of Wellingtons. Chef Ramsay recipe is quite salty. If I may suggest, you could replace the Prosciutto (Parma ham) with an herb crepe or wilted spinach leaves. Just a thought. Keep burnin!
