Hey I always wanted the recipe of Gobi which we get at any local fair. I have experimented with various sauces to get the same taste but still no luck. I will try your recipe once. The other day I had bought gobi machuriyan from our local fair and I took it parcel home and told them to give me fried balls sperate and sauce sperate so that I can heat it at home. In sauce i have noticed they had put some kind of leaves as I can see it was almost black in colour and very fine. I am still kind of figuring it out what it was. As I initially thought it was kasturi methi but it was not as when I tried it with that the sauce tastes diff and bit bitter..

Amazing recipe. But why didn't you peel off garlic??
Because I heard that from my father and other also without peeling the garlic it give good test to our food, so that's why I don't peel garlic but not always....most of the time when I make Chinese food or non veg on that time only I don't peel garlic....so you can also try.
