This is the description from Mariowiki. "After getting a gold trophy on every level, Boost Mode will be unlocked. In this mode, you can replay every stage at a faster speed. Jimmy is bald from the start, and the player will get Cluck-A-Pops for getting the bronze and gold trophies."
Unfortunately, I can't think of any tips for that one. I noticed I didn't normally shake the gamepad on the jumps in that stage, but I don't remember if that made it easier to get the gold.
