I so look forward to your videos and love hearing you. My two cents for the dosai: when you make it thin, the exposed top cooks anyway. Simply fold and remove after cooking one side to keep it crisp. Turning it softens the dosai. Anna, your able camera work and commentaries make the videos so nice. Thank you both.

Also seen some of your other videos and experiences you have shared. When most of current mid and older generations wont even have a photo or video or rarely get to know about experiences like how they lived etc., of their grand or great grandparents, yours videos are gem for your family and your generations will be proud of your effort. Muga vadam, etc. recently in tamilnadu it was a hottopic that in ration government is supplying masoor dhal which is not good for health and also it's sale was banned in 1968(in 60's).... But in many hotels I see they serve sambar made with masoor dhal...because it gives same taste of thoor dhal...

For ghee roast, masala dosa is the perfect flour, with good golden colour. Seeing the video salaiva is coming. Of course using more oil gives more crispy texture. Mami is always giving good tips too.
