Just about any fish caught and eaten fresh is great. We once caught a leopard ray and had it on the bbq just after we caught it. It flaming tasted better than the coral trout we had frozen in the freezer !!!!!!!! Rays are now protected in Australia so unfortunately we can't have any more ............. memories !!!
Cant beat those fishing days. When we catch small kahawai like that we flour the frame after the fillets are off and fry it up in some fat or butter, mate is so crispy and good chompin

Flounder on the incoming tide will be more at the outside of the channel and on the out going they will be in the middle more in the deeper water. A good head torch will work fine.
Removal of blood as soon as possible (at least here in BC) improves the taste in Halibut and Salmon. I can attest to that. Don't know about every other fish but I habitually do it mostly because it also prolongs the shelf life when refrigerated for a couple days. Also I Vacuum bag and freeze my fish for later and the more free of blood the longer it will keep fresh, less bacteria. My two cents. I do think there are probably way more nutrients in the blood if left in but I need my fish to last months in freezer.
Try this clay to find out for your self. Wack one on the head to kill and mark it some how. Then bleed one. See if you can tell the difference when you fillet them. Have just been told from a fishing charter captain with over 35yr experience it makes no difference. Let me know if its true or if he just doesn't want people turning his boat into a bloody mess
its does make a difference but each to their own. You can take it one step further and after you have given them the iki you can run a wire down their nervous system and stop them switching. If I have no ice and its a hot day I replenish their seawater every 30 mins and keep them alive until leaving for home. The rules are...do what works best for you in any given situation. Your sea captain will have a method to his madness. I doubt he is worried about blood on his decks if he is running a commercial fishing charter boat.

You guys are using spinning rods when you should be using flies, I told them we'll just see about that, we had a total of 88 and they caught 4 or 5 and they wouldn't talk to us anymore. Everytime we hooked one we hooted and hollered and it pissed them off, we ruined their show.

There is no real off season for certain species. Flounder, kahwai, mullet to name just a few can be found all year round
