The proportionate force argument only works in hindsight in the court case. If someone breaks in with force, smashes your window open and jumps in wearing a balaclava, you stab him and he bleeds out and the police later discover he was only armed with a teaspoon and a sharp wit, it looks bad. In the heat of the moment, when you've been invaded and hear someone running up the stairs to you, it would take a psychopath to stay calm and measure up the threat with a level head. I'd be panicking and clutching a chefs knife and lunging at them as soon as possible, I don't care whether you're armed with a foam finger or the demon core.
I think it's pretty standard that if you're the kind of person who has such a violent allergic reaction to commonly available things, you probably have something like an epi-pen so I'm not sure how realistic severe allergic reaction would be as an easy murder option. Then you have to justify why you didn't help with the epipen, which should give enough time for paramedics to arrive at least. Or, you have to explain why you didn't call emergency services... It'd definitely be 'easier' to get away with than just straight up normal poisoning, shooting, stabbing, etc, but it feels like inviting them to a high cliff and them having a clumsy accident is more reliable than hoping they happen to have such a violent allergic reaction they immediately die.
