Damn this guy is smooth. All swanked up in a suit and still massaging that salmon...
I did this hanging technique and lost half my salmon to the bottom of the smoker, it all fell apart. My pieces may have been too big, but either way lost quite a few pounds of good salmon! Will not do it next time.
Trying cutting the fish the other direction. It will hold better. Or just don't hang it at all, just lay on the rack.

you can also leave the skin on...when the fish is done, the skin will peel right off.@@brandonroth6032
