The Minecraft squid really is strange. My biggest problem is of course that they don't drop calamari, but there's also as you said they only have 8 tentacles. But the thing is, you can't call something that dumb an octopus, octopi are smart. And blue? Most squids aren't blue. As for size, squids in real life can range from an inch to 15 meters.

I'm actually very surprised they've lasted as long as they did and weren't replaced with something else in the oceans update like the Zombie Pigmen were with the nether update. I put it down to the horrifying idea of trying to actually implement a decent system for tentacles into minecraft.

Some of the mobs when scaled would be within one dimension's range but too large or too small than the other, like the cat. I don't remember off the top of my head if that's true for these two mobs, but I think it is.

Spiders, based on real life, would have the same behavior as passive mobs. It would be nice if that's actually the case, since they're honestly really cute in that small scale.
If Minecraft mobs followed the same laws of size as real organisms, the Ender Dragon would be way smaller, because Square-Cube Law. If the Ender Dragon was real, not only would it be too big to fly, but it might even collapse under its own weight.
