    I make " chicken" and delicious pepperoni using vital wheat gluten-- super easy. The chicken only takes 3 minutes in an Instapot and the pepperoni about 30 minutes.

    Do you reduce the starchy seitan water down to make wraps or noodles (similar to rice paper wraps once softened or like flat rice noodles by slicing up the 'wheat wraps')?

    And look after yourself Kathy - my ex-MIL kept getting really sick while trying to do keto even though she had her gallbladder out when she was a teen (in her 70s now). There was no convincing her that grains, legumes and fruit are healthy though. She was convinced by blogs on the internet that ketones are the optimal energy source for humans instead of carbohydrates, even though she literally couldn't digest the high fat from her keto diet..
    I remember my mum had a gallbladder attack as well when she was almost 40 in the process of losing weight and we reduced our fat intake as I was reaching puberty then and it helped keep pimples away. Lower fat has always suited me best. Whenever I eat higher fat foods (even whole foods) within half an hour to an hour my pores start releasing excess sebum, then my skin and hair get so oily 😣

      No, I never did any of that extra stuff with the water and all of that. I find myself kind of done at the end of these projects and don't usually do the extras that people say to do.
      I've since had the surgery to get my gallbladder out, which is annoying but true. Everything with my digestion seems 100% better than it's been in YEARS. It was an ongoing problem for me for a very long time. I think being vegan maybe made it take longer to hit the point of no return. If I had been more perfectly plant based it may not have been necessary to ever do surgery.
