  • Beyti Kebab Recipe
    - [ ] 500 grams of ground lamb or ground beef
    - [ ] 1 medium onion
    - [ ] 2 cloves garlic
    - [ ] Half bell pepper
    - [ ] Few sprigs of parsley
    - [ ] 1 teaspoon cumin ( add more if you’d like)
    - [ ] 1 teaspoon salt (add more if you’d like)
    - [ ] 1 teaspoon pepper (add more if you’d like)
    - [ ] Yufka sheets
    - [ ] 2 tablespoon olive oil
    - [ ] 2-3 tablespoons of butter for brushing
    For tomato sauce:
    - [ ] 2 tablespoons of butter
    - [ ] 1 tablespoon of tomato paste
    - [ ] 1 tablespoon of pepper paste
    - [ ] Salt to taste
    - [ ] 1 teaspoon chilli flakes (optional)
    - [ ] 1/4 teaspoon paprika
    - [ ] 1/2 cup water
    Directions:
    Meat:
    1. In a large bowl, place the meat.
    2. Use a chopper to finely process the onion, garlic, bell pepper, and parsley.
    3. Add the processed mixture to the meat along with salt, cumin, chili flakes, and black pepper. Adjust the seasoning to your preference, especially the salt.
    4. Mix the ingredients thoroughly and refrigerate to marinate. For enhanced flavor, it's recommended to marinate the meat for a longer duration. Overnight marination in the fridge works well.
    5. After marination, shape the meat into sausage-like logs for the kebabs. Bake them in the oven at 375°F (190°C) for 10-12 minutes. Note that the kebabs are not fully cooked at this stage.
    6. Cut the yufka (thin Turkish bread) in half and brush it with butter. Fold the two sides inward, and once the meat has cooled, place it on the yufka and roll it into a log shape resembling a sausage. Ensure the roll is not too loose, as it may unravel.
    7. Diagonally cut the roll into mini pieces and arrange them on a baking tray. Brush the pieces with butter. This step is crucial as it gives the yufka a golden and crispy texture.
    8. Place the tray in the oven at 375°F (190°C) and bake for approximately 20 minutes or until the yufka turns golden brown.
    9. For the tomato sauce, melt butter in a pan.
    10. Add tomato and pepper paste to the pan and mix on medium heat.
    11. Stir in salt, chili peppers, and paprika.
    12. Add water to achieve a consistency that is neither too thick nor too runny, finding a balance in between.
    13. Once the kebabs are cooked, plate them and pour the tomato sauce over them. Serve with yogurt.
