A bit different to how I was taught! There is the basic egg sponge, which is light; the Victoria sponge, which is slightly denser and uses buttercream; and the fatless sponge, which is filled with fresh cream.

Can you spoon some of the cream ontop of the jam if you dont have a piping bag?

Yes but it might be easier to put the cream first and spreading the cream on top of the jam would disturb the jam layer
