Good recipe. My take on it: Mongolian Pork Ingredients: • 1 pound pork tenderloin, sliced across the grain • 2 tbsp. soy sauce • 1/4 tsp. pepper • 3 tbsp. cornstarch • 2 tbsp. cooking oil • 1 medium onion • 2 cloves garlic • 1 tbsp. ginger • few pieces of spring onions • 1 small red bell pepper Mongolian sauce: • 1 tbsp. soy sauce • 1 tbsp. oyster sauce • 1 tbsp. chili-garlic sauce • 1 tbsp. brown sugar • 1/2 tbsp. sesame oil • 1 cup cold water • 2 tsp. cornstarch Directions 1. Marinade pork with soy and pepper, then coat with cornstarch, mixing well. Next add oil and mix well. 2. Make the sauce: combine all and mix well. Set aside. 3. Fry pork in hot oil until nice and brown and crusty. Add onions, ginger and garlic and keep frying. 4. Add spring onions and red bell pepper keep frying until veggies are softened to your desired level of doneness. 5. Add sauce and stir until it thickens and cooks the corn starch through. 6. Serve with sticky rice!

Why did my pork become mushy after adding and mixing the corn starch? I added the oil after giving it a stir with the corn starch only, just like in the video. Then it got stuck to the bottom of an oiled stainless steel pan... in the end, the result was delicious, but how can I avoid that next time?
