I've had a Breville Bambino for a few years. Yesterday, I received shipment of a Bluetti AC180 power station, which has an output of 1800 watts. The Bambino requires 1560 watts, according to the manufacturer's specs. Should be a slam dunk, but it doesn't work. The pump works, but the heating element doesn't, so I get cold, really horrible "espresso". Can't really call it espresso. I'm so bummed. I spent $900 for AC180 just so I could make espresso off grid. Any suggestions?
Well looks like you have a dodgy Bluetti as the reviews I've seen indicate they can accept a peak load up to 2500 watts and continuous loads up to 2200 watts. So I think you should return it under warranty.
The link works in Australia so not sure where you are which may cause an issue if your overseas. Just Google the "Breville Bambino" coffee machine. Its still available here.
I dont think I would use a modified sinewave inverter at all these days. Good sinewave inverters are not that expensive and you know they support any product.

I have a 2kw Renogy inverter. It does it no problem.
