If you wanted the cars to actually go through the loop giving them an extra piece of track to travel before they hit the loop and adjusting the booster speed accordingly could've worked. They were jumping so much before the loop that they didn't have any traction so of course they all fell off the loop halfway up.

I've been hacking the playset so the monster trucks can go through a loop but not much power after that. I simply don't have enough Lego Technic. So many different hobbies.
I would suggest putting mechanism on a spring so that the spring would try to push the wheel towards the track resulting in a better grip of the car. Mechanism in the vid(1 wheel on top of the car) can only grip car's roof thus loosing momentum. This would also work if you can manage to do it with 2 wheels on the side that push inwards
I mean essentially these are how the Flywheel Launchers work, it was still neat to see how increasing the gear ratio effected the overall launch power.
I have a design recommendation... Why have the wheels be 100% stationary, when they could be located on "swing-arms", allowing them to better adjust to individual car shapes? Either have the swing-arms pulled together by some rubber bands, or use springs to push them together from the outside (if you're using the two-wheel design). For the single-wheel design, a spring-pressed vertical swing-arm should keep things working well... Actually, what of you swapped out the wheels themselves for treads/tracks, particularly ones like on the old "Manas", "Muaka and Kane-Ra", and "Tarakava" sets from early Bionicle (or wherever else you can find suitable examples)?

Swing arms could be achieved with careful utilization of the shock absorber piece (76138)
