3:17 im really confused on the rhythm here. It sounds like he’s strumming less than what the sheet music says or is he just switching the tempo midway through?

At the bottom of the scale at 1:00 Why do you slide down to the Ab at fret 11 on string 2 rather than plucking the Ab on fret 16 of string 1? That seems like it would more naturally be part of the G-shape pentatonic scale.
slightly touch the strings with your fretting hand to where it doesnt make a sound. i had this problem when also learning how to mute. honestly you just naturally learn how to mute the strings when playing. i stopped worrying about it and gotten better at muting

does anyone have advice on how to get better at picking muted notes in between the other notes? It's really hard to do for me for some reason

You just need to touch the string instead of of pushing down. So after you’ve played a note just don’t put as much pressure into hold it down an pick
