Actually I feel there are a lot of more iconic eateries all over India and mostly in Mumbai & Calcutta which are over 100 years old and maintain the same taste & quality till now and are still hugely popular among people from all backgrounds and age groups.

My grand dad drank sherbet in Paradise sherbet in the 1930 when he was a student in Calcutta, my dad came here in the 1950s, I went in the 1980s and hope my daughter goes there when she goes to study in the Calcutta in the 2020s

You have missed out Royal Indian Hotel in Kolkata which started in 1905. It’s an iconic place and according to most sources, they are the ones who inteoduced the concept of biryani and chaap in Kolkata.

Thanks to proprietors of all historic restaurants for serving past, present and future India.
For the ignoramuses from Delhi and Mumbai, there is no India beyond the Vindhyas. They have included CTR and Mitra Samaja so that people don't accuse them of bias. There is much more to the South of India than just Idli and Vada. There are loads of such old joints in the old city of Hyderabad, Shivajinagar area of Bangalore, Kozhilode as well.
