Dear Charlie, What a wonderful message. I was just on the phone with my older sister talking about the stuffed peppers my nonna made with no chopped meat or rice. She used eggplant pulp and stale bread. I’m crazy excited to do the recipe video on it. Yes I do use tomato paste and love love anchovies. Sunday my orecchiette with broccoli video will be released and I use anchovies. So delicious! Thank you for watching, I almost feel an obligation to pass on recipes otherwise one day they’ll be gone. Twenty years ago, when I was in college, I worked the counter at Scillian Bakery in Chicago. I had to learn the names of all the Italian cookies, pastries and breads. A family friend of the owner would make Panelle which I love. I can't remember the name but my favorite pastry (beside cannoli) was brioche filled with cannoli filling, covered with bread crumbs and deep fried. The most wonderful food I've ever had. I'm enjoying your channel so much because it reminds me of the friends and food of that time.

Thank you so much for making the recipe. 350 is good. They do need lots of time to cook. If you want the top a little darker higher to 375.
