  • Root crops are always funny. They can be a little tough to know when to harvest, especially if you forgot when you planted them! We've had lots of questions about growing garlic, so let's check in on my patch and show you what you need to know:

    0:18 Harvesting early
    2:03 Soil conditions
    3:36 Garlic scapes
    4:37 Planning for next year
Garlic is one of my favorite things to use in the kitchen so we grow A LOT of it. We're constantly working to keep seeds in stock, so many of you are growing garlic too.
Here in April, we're only about halfway through the garlic growing season. You don't want to harvest anything yet because it will be small and pretty disappointing. Your bulbs will have all of the right flavors, but they're not going to have the size. That's going to come with the longer days and increase in hours of sunlight.
Up until about late May, you want to really keep an eye on your soil's moisture levels. As the leaves turn brown and fall off, that's your signal to turn your water OFF. This is a critical step to help dry out the paper on the outside of the cloves. Otherwise, you run the risk of your garlic rotting and the cloves separating.
Around April or May, you may notice flowers forming at the tips of your leaves too. These are garlic scapes, and they're a delicious mini-harvest before you pull the whole bulb. The leaves are also green, but the scapes are really tasty! They have a lot of culinary uses, but some of my favorites are garlic scape pesto or just right on the grill.
Homegrown garlic is just the best, but it takes a long time especially considering its size. You want to start out with good seed from a reputable source. You want it to be disease-free and local if possible.
Garlic also needs to be vernalized, or you may have also heard this said as chilling garlic so it can get the right number of chill hours required to encourage sprouting. You usually want to do this for about 40-60 days.
You want to plant it in the fall. We like to plant it on Halloween! That gives the plant all of the winter to grow and establish its root system. You'll be ready to harvest in the late summer.
After harvesting, leave your garlic in one place - either on the counter or in the fridge. If you store it in the fridge and take it out, the cloves are going to want to start the process all over again!

Greetings from zone 9B. I'm growing garlic for the first time. Ajo Rojo, specifically. Planted them later in November in my raised bed. I fertilized them with a 2 gallon watering can and some Neptune's harvest tomato and veg, then hit them with the hose to water them in and get it down in the soil real good. Now all 24 of them are going strong, having well breached there mulch.
So if I'm understanding, they should just be allowed to stay as is through the winter, being watered so that the soil remains moist? Not doing drip irrigation or anything. I just go out and take the hose to everything and pretend like I'm the god of rain.
And what about future fertilizing? Do they need that regularly? I made a pretty tasty soil. If it matters, the raised bed is filled with a combination soil I made. My own native soil which seems to be mostly clay, so it was fun trying to break all that up. Pete Moss. Black cow manure. And I even threw in a bit of worm castings. Their neighbor, the tomato, is going strong as well, though it doesn't seem to like the cooler weather And I fear it's running out of time.

Thank you so much for this info, I will turn off my drip irrigation, I believe that's what I was doing wrong ❤️💃🤗

Well, not so fast. They need to be irrigated, you turn off the irrigation closer to may. They need moisture now to continue to grow their bulbs.

Ugh! I’m so impatient. I want to harvest it but I know it’s probably not going to be ready yet. I planted mine the 1st of December :)

Yes, we know it's hard. You can harvest some if you want but patience pays off.

Mine pretty much all failed. Not 100% sure what went wrong. They were chilled in the fridge too. The grew just fine at first with no sign of diseases but then their tops started to turn prematurely brown and died. I suspect a lack of nutrition since I believe they're supposed to be a hungry crop but I don't know for sure. Oh well. This was my first time trying to grow them so maybe next year will be better :/

Where they irrigated? They need consistent watering until about may where they can be left to finish maturing in the ground.

I planted my bulbs in November. I’m getting impatient because I need my garden bed for squash seedlings.😅

Really, you want to wait till June/July! But if you have to pull some now to make space, they will be delicious just small.

I just pre ordered garlic from you a few days ago. In this video you recommend planting around Halloween but you also suggest chilling it for 60 days which would be the end of November. I want to plant by the end of Oct. if it’s only chilled for 4 weeks will it make that much difference? Or does it have to go 60 days in order for it to make a difference?
    Thanks

Hello, I planted my garlic on 10-30. I just watched your video. Thank you for the info. My question is, I just watered my garlic and the leaves are browning. I also dug up exactly the way you did in the video and saw some white bulbs. They felt firm and hard. Did I ruin the garlic by watering today with brown leaves?? Would you please advise me how to water going forward?? I feel like I am ruining my garlic by watering too much. This is my first time growing and have over 100 plants.

You did not ruin them. Let them finish growing. Harvest mid summer. The tops will naturally turn brown before.

Question: If harvested at the end of August, the same harvest bulbs can be chilled for 60 days to plant on Halloween? Full cycle?

Sure can. I would spit up the bulbs so you have some that are for eating and some for replanting.
