    You are an amazing chef! so glad I found this channel. I really need to up my healthy Chinese cooking game! I imagine this dish along with the napa cabbage dried shrimp and egg Yo Cai fried rice on my table at the same time in the very near future!! And those are literally the first 3 videos I watched so thats saying something.

    Looks so good, and doban Jiang has such great flavor. Will definitely try this. I'm assuming i could use chopped fermented black beans instead of black bean paste? I've never seen those garlic chives in the US, even in good asian markets. Leeks will have to do i guess...

      Thomas Mace Yes, it is fermented black bean paste. Chinese Leeks are not always available even in Asian market. Whenever I see it, I must buy 😊

      I normally make rice not too soft in rice cooker, 2 cups rice with 1 and 3/4 water.

    I have a question about how to store fermented black beans. I found this asian supermarket where I bought them and used some for this recipe. The leftover beans went into a ziplock bag and into my fridge. Unfortunately they were white-ish after a week. Was it good to discard them?

      I store it in the fridge. Please read the label for expiration date. Disagree it when it turns white.

    Will normal flour do instead of corn flour for the marinating, I can't find any corn flour recently because of the Bing Du panic shoppers. I guess the flour wont tenderise the meat pieces ? Would baking soda work ?

      I never used regular flour but it should help. Adding baking soda can tenderize meats too 😊

      +James Lande Sesame oil is not a must for some dishes. You may add some to your liking in the end.
