I was just watching a video by dopey fpv they've made a tpu mount that fits the o3 air unit and it mounts to a standard gopro mount looks like the same size as a session.

Yeh I saw that as well. They sell it on AliExpress too! It's pretty cool to see other versions out there and I was sure eventually someone else would have come up with their own design. 👍

being not so good at soldering .. what is the disadvantage of just soldering the wires onto the air-unit and then having a plug on the end to connect / disconnect ?

I believe using a plug for air unit connections aren't affected that much, and if so, are minor and negligible. Reason I say this is because many, if not all, flight controllers that are digital VTX compatible, use a plug to interface with the air unit. Even the O3 air unit has the plug now, which means it requires both ends to be plugs instead of soldering directly. This is of course a matter of convenience and for the likes of people who aren't comfortable with soldering, can still use the product. However, if I were to want absolute reliability for long range or commercial use, I would solder everything where possible since I can be guaranteed it will give the best power and signal transmission/communication between components. If anyone disagrees, please let me know. Happy to be corrected or clarifications to be made. 😁
Other components, such as motors, ESCs and battery etc, definitely benefit from soldering compared to plugs.
