My family is from Cincinnati and when I travel to go see them we always have to stop by Skyline and White Castle. We don't have a Skyline here where I live so going to Skyline is a huge treat. It's okay, I'm not a huge fan, but it's a fun thing to do with the family and they get a kick out of me acting like I really like it so I'm happy to make them happy. I brought some skyline packets to make for my wife. She was highly offended that I severed that to her. She hated it but when we took her to Cincinnati she actually really enjoyed her 5-way. The stuff in the cans and packets don't hold a candle to the real deal. :-) it's cool to see you try it! I love watching your videos! Thanks for all of your hard work!
I’m from Cleveland and it’s even a thing here, and absolutely delicious! There’s a Skyline around the corner from my house. 4-way onion is the way to go, with a cheese coney, and no twirling is correct. When you made your 4-way I could almost smell it and began to salivate. YAY CINCINNATI CHILI!!!

Check out country club bakery in Fairmont Wv they are supposed to be the original makers of pepperoni rolls. I live about 5 mins away from them and there's nothing like a fresh one❤️ but super simple to make at home most of us just eat them plain but sometimes people add Oliverios peppers, sauce, mozzarella or american cheese😊
Mind you, I've never lived there ... only visited ~10-15x, but I can tell you with mild authority, if you can see the other ingredients, *there was not enough cheese* ....

I lived out in Florissant and never saw them there but my great grandparents and grandparents lived in the city almost to downtown that is where I got mine. Its basically Shrimp egg foo young on white bread with onions and tomato or sometimes lettuce. Its pretty good. Never seen it anywhere else.
I was raised in Kentucky and my major fam-tree came from Indiana, and I have fond memories of my Mother making this style of chili, in the winters. It stuck to your ribs and filled us up. It's a great comfort food. When we moved to Texas; you'd have thought she'd committed a mortal crime putting anything other than meat and chili fixins, in her chili. She dropped the spaghetti from her chili recipe after we moved. My brother swore it was just something she did to stretch the meal budget. I am glad to see it has some recipe roots that go deeper than just frugality.
East side Cincinnati here, I prefer Gold Star. You are absolutely correct to cut the noodles, but I honestly just use the side of the fork. If you still have some left over, layer some cream cheese under the sauce and cheese, and heat it up. Scoop it up with corn or tortilla chips.
From my grandmother's hand-written cookbook (circa 1934): "Sauce for Spaghetti from Greta Esterhazy in Covington" - 1 pound lean beef ground or minced fine with a sharp knife; 2 tablespoons fat; 2 onions minced fine; 2 cloves garlic minced fine; 2 teaspoons cinnamon; 2 teaspoons fish sauce (I am guessing Worcestershire sauce); 10 leaves Italian herbs minced fine; add walnut ketchup (I am guessing A-1 sauce) for taste; salt well. Covington, Kentucky is just across the river from Cincinnati.

I'm from Cleveland, Ohio and I live for Cincinnati chili! I make mines with homemade chili, and top it with cheese, sourcream, and jalapeno peppers. The same toppings I put on my regular chili. Soooo scrumptious! 😋❤
I live in West Virginia and we go to Cincinnati quite a bit. I love Cincinnati chili. I find most people either love it or hate. I have made it at home before. I think the unique taste come from the cinnamon , coco powder, and clove. I found a recipe for making it into a dip for tail gating. Nice video, can’t wait for another one in this series
You don't twirl. You cut it with your fork. The cheese and chili make it hold together well, so you get a good chunk of both in each bite. Twirling it makes it all fall off.
when I make chili.. there is always one night when it is served over spaghetti... and yes adding cheese and onions. I just called it Chili Mac... I love my chili just like the next person.. they love their own chili... LOL oh... I twirl my chili mac... wouldn't think of cutting it up!!
Yours sounds pretty good too...🙂 I actually make my moms Cincinnati 3 way chili...and tht is with it served over thin spaghetti noodles and sometimes..very rare bc we always want the 3 way chili!..sometimes I make "regular" chili and I will make "my moms" chili mac with leftovers the next night which is elbow macaroni noodles, mixed with our chili, lots of cheddar cheese mixed IN IT and FRITOS put on top of it all(after u spread mixture in casserole dish!) Then u put the fritos and more cheddar on top the frito layer and throw it in the oven for a bit and omg its sooooo good lol. U can also mix some.fritos in the noodles chili and cheese mixture and put them on top too!

As a child in Kentucky we would often took trips to Cincinnati and trips to Skyline were a treat. I always preferred it to Gold Star. I would love to have some again. Sadly I no longer live in the area.

I've been wanting you to try Cincinnati chili for years! I'm so glad you finally had a chance to taste it! I will say though, Skyline and Gold Star are far from our only chili parlors here in Cinci, though they are probably the most prevalent. The chili in the restaurant also takes way different from the packaged stuff. (Gold Star is better in the store, by far. Canned is okay, but you really have to try it in the restaurant someday.) That said, if I can scrape together enough kinds of chili, I may have to send them your way...for science.
Oh, and also, we don't eat it with a knife. I don't think I've ever seen anyone actually cut their spaghetti with a knife. It cuts just fine with the side of your fork. And did no one mention oyster crackers? They're an important part of Cincinnati chili. It's the first thing you're served in chili parlors. You sprinkle them over the chili (or eat them with hot sauce on top. Ah Cincinnati and our strange food culture) and it adds a nice crunch like the onions.
Yay! I’m from Cincy and am so happy you made this video. I always liked gold star but only because they had crinkle fries, where skyline has skinny. One thin I didn’t see mentioned yet is both places hot dogs are little. They are like half the size of a normal dog. So cute to eat.

Thats a pet peeve of mine, people explicitly wanting the orange cheese... it came from milk, milk is white the orange is colorant. You don't need the colorant as long as you have the good flavor of your favorite cheese. But this makes wanna try it 😂 I love chilli and hearty meals, time to try this.
OMG! Had always been intrigued by Cincinnati chili! Your video inspired me to try making a pot of it. The spices were amazing -- cumin, cinnamon, allspice berries, cloves, cayenne pepper, chili powder, and dark chocolate! Took it a step further by substituting meatless ground meat and chopped brown mushroom for the 2lbs of ground beef (to be a bit healthier and for the veggie bf). It was AWESOME! Thanks for the inspiration.
I grew up eating what we call '3-way chili'. Spaghetti, chili (with or without beans) and cheese. Then you can add to it as desired. My kids now love it with cut up hot dogs, onions and sour cream. Oh, and I was born and raised in Oklahoma and now a Tennessee transplant.
Mostly in my country if it was a homemade spaghetti we usually cook the spaghetti sauce with chili . You soaki the dried chili with water for like 15m 30m after you cut them , throw the water out and bland the chili with a bit of water and it turn into a paste , cook the paste with some garlic and red onion in oil , and put the tomato pasta sauce after the chili cook and put some salt and sugar , done . You can add whatever you want like a cheese or sausage or mince beef . Trust me it would taste so so good . Spicy and tangy . I need to make them tonight 😋😋😋😋😋
Also love to grate my own cheese too! The pre-grated cheese is coated in preservatives so it gives it a different taste, texture and it doesn’t melt as smoothly
my family makes our cincinnati style from scratch, I've never lived there (we're from florida) but we usually eat it in a bowl like normal chili with beans added in, it's just creamier than normal chili and wonderful
Canned Gold Star Cincinatti Chili qualifies for your hard times series too. The dollar store in Cincinatti often has it two cans for a $. Some people serve it with sauerkraut, there were a alot of Germans in Cinci too.
Cincinnati chili is basically an adaptation-evolution of a very common Greek dish, “makaronia me kima” (pasta with ground meat) that has a mild onion-tomatoey sauce with a little cinnamon in it. Usually you’d put a little kefalotyri on it (a salty sharp grating cheese). I’d be surprised if they didn’t do something similar over the border in FYROM too.
Haha! I eat skyline at least once whenever I go back home. Definitely tasty. My favorite way to eat skyline is by creating a dip... bottom is cream cheese, then a nice layer of skyline, then a layer of cheese. Bake it until hot and dip in corn chips!
As someone from Cincinnati, skyline is way better than gold star. Skyline is the more spiced one and gold star the more bland one when you have it fresh.
We’re in Emmie’s home kitchen again! Gold star is cinnamon forward. Skyline is cocoa powder forward. I refuse to eat Skyline, but am making homemade Goldstar tonight. Cincinnatian here who orders a 4 way onion. When people eat in, they often take the oyster crackers and top them with a drop of hot sauce on them. Also, at the restaurant it is stacked so well you can cut it into perfect bites that don’t fall apart.
I've always been more partial to Skyline. The last time I tried Goldstar it was more sweet tasting than Skylines salty taste. I'll try it again sometime and see if my tastebuds change. Glad you enjoyed them!
So one big thing here in Colorado is the Green Chili Slopper. It is pretty specific to Pueblo, Colorado but there's been an episode of "Food Wars" on Travel Channel featuring two of the best taverns in Pueblo. But, if you make it, you have to do the green chili with pueblo chili's
I travelled, worked and was Lead Exec onsite at a manufacturing company in Milford, OH and I love Skyline three way with spaghettie and a dog three way. They are incredibly light and the sauce is just better.

We associate cinnamon with desserts here in the US, but according to many of my Indian coworkers, they actually use cinnamon in a lot of their main course items, like curry and chili. They were actually somewhat surprised when I brought them some fall and winter desserts that contained cinnamon (mainly in snickerdoodles and pumpkin rolls). They said that the desserts tasted familiar in some way that they couldn't identify - and when I said it had cinnamon on it/in it, they thought it was strange to see paired with sugar and other sweet things. As for Cincinnati chili, I've never been to either place, but we have made our own, which is highly recommended in my opinion. I've had a lot of different chili sauces from restaurants and they usually don't end up quite as spicy as my family prefers our chili. We go through a *lot* of chili powder during the winter. But my dad's chili has so many spices I probably couldn't list them all - but there's some pretty unique ones in there like curry powder.
Us Ohioans have corn fields, HELL IS REAL, Grandpa’s Cheesebarn, and skyline chili. We also say things like “Ope, ‘scuse me, imma just sneak past ya and grab the ranch.”
How cool that Cincy chilli made it on your channel! They sell seasoning packets that you just add to ground beef and tomato paste to make it yourself. Thats better and closer to the restaurant flavor than either canned product is. Plus, you can make substitue ingredients. For example, I like to use ground turkey instead of beef :) Thanks!!

I'm from Indiana, neighboring Ohio. We've always eaten chili with pasta, however my mom & I make it with macaroni. It was so much easier & neater to cook, serve, & eat than spaghetti noodles. We call it Chili Mac tho.
I'm from Southern Indiana and grew up with chili that has spaghetti in it....both school lunches and my mom's (and DON'T forget the peanut butter sandwich that was always served with it). I didn't know about "Cincinnati style" chili, but certainly had no idea that chili was available without pasta (specifically spaghetti) until I grew up and started traveling. Mmmm chili. I'm from a town about 30 mins from Cincinnati. I used to eat Gold Star and Skyline all the time. When I was pregnant I ate Skyline about every other day not joking. I moved to Kentucky and I am forced to buy it in the can and it might not be the same I'm grateful, I can get close to the experience of eating at the restaurant. What I am missing is the fluffy cheese. Oh it's also better with oyster crackers and hot sauce!
Emmy, I'd love to see you make Runza. It's a delicious beef, cabbage (sometime sauerkraut, sometimes cheese) and onion filled bread pocket, mostly found in Nebraska and Kansas. There's even a regional fast food chain that sells them. I'm from Iowa, but my dad is from Nebraska and whenever we visited his family we would stop there, so I have really fond childhood memories of them, and I make my own now, since the nearest one is over 100 miles away.

My grandma made something similar to chili spaghetti but it was basically crushed tomatoes and that packaged chili seasoning you find by like packaged taco seasoning and meatloaf seasoning. Not really the same as this so Idk if that counts but my mom’s always called it chili spaghetti

You have to try New Mexican Hatch green chile! You can eat it with anything- enchiladas, breakfast burritos (actually any kind of savory breakfast), pizza, burgers, pasta, you name it!
I've been putting chili on egg noodles for years. Recently I've gotten crazy and put it on top of gnocchi with sharp cheddar. Your bun should be toasted and your cheese should be melted . True story, my Mom, brother, and I lived in Cincinnati in the early 70's.

when I make chili.. there is always one night when it is served over spaghetti... and yes adding cheese and onions. I just called it Chili Mac... I love my chili just like the next person.. they love their own chili... LOL oh... I twirl my chili mac... wouldn't think of cutting it up!!

Yours sounds pretty good too...🙂 I actually make my moms Cincinnati 3 way chili...and tht is with it served over thin spaghetti noodles and sometimes..very rare bc we always want the 3 way chili!..sometimes I make "regular" chili and I will make "my moms" chili mac with leftovers the next night which is elbow macaroni noodles, mixed with our chili, lots of cheddar cheese mixed IN IT and FRITOS put on top of it all(after u spread mixture in casserole dish!) Then u put the fritos and more cheddar on top the frito layer and throw it in the oven for a bit and omg its sooooo good lol. U can also mix some.fritos in the noodles chili and cheese mixture and put them on top too!

As a child in Kentucky we would often took trips to Cincinnati and trips to Skyline were a treat. I always preferred it to Gold Star. I would love to have some again. Sadly I no longer live in the area.
Born and raised in Cincinnati and I've actually never had gold star, skyline is the best. I used to go to skyline every Sunday after church! Much love.
I have family and friends in Cincinnati, they all agree that while Skyline chili is the original, Gold Star chili is the best. Great video Emmy!
To be specific: one brand has chocolate the other doesn't. However I'll leave you guessing as to which is which ;)

I've been wanting you to try Cincinnati chili for years! I'm so glad you finally had a chance to taste it! I will say though, Skyline and Gold Star are far from our only chili parlors here in Cinci, though they are probably the most prevalent. The chili in the restaurant also takes way different from the packaged stuff. (Gold Star is better in the store, by far. Canned is okay, but you really have to try it in the restaurant someday.) That said, if I can scrape together enough kinds of chili, I may have to send them your way...for science.
Oh, and also, we don't eat it with a knife. I don't think I've ever seen anyone actually cut their spaghetti with a knife. It cuts just fine with the side of your fork. And did no one mention oyster crackers? They're an important part of Cincinnati chili. It's the first thing you're served in chili parlors. You sprinkle them over the chili (or eat them with hot sauce on top. Ah Cincinnati and our strange food culture) and it adds a nice crunch like the onions.
Yay! I’m from Cincy and am so happy you made this video. I always liked gold star but only because they had crinkle fries, where skyline has skinny. One thin I didn’t see mentioned yet is both places hot dogs are little. They are like half the size of a normal dog. So cute to eat.

Thats a pet peeve of mine, people explicitly wanting the orange cheese... it came from milk, milk is white the orange is colorant. You don't need the colorant as long as you have the good flavor of your favorite cheese.

OMG! Had always been intrigued by Cincinnati chili! Your video inspired me to try making a pot of it. The spices were amazing -- cumin, cinnamon, allspice berries, cloves, cayenne pepper, chili powder, and dark chocolate! Took it a step further by substituting meatless ground meat and chopped brown mushroom for the 2lbs of ground beef (to be a bit healthier and for the veggie bf). It was AWESOME! Thanks for the inspiration.

I grew up eating what we call '3-way chili'. Spaghetti, chili (with or without beans) and cheese. Then you can add to it as desired. My kids now love it with cut up hot dogs, onions and sour cream. Oh, and I was born and raised in Oklahoma and now a Tennessee transplant.

Mostly in my country if it was a homemade spaghetti we usually cook the spaghetti sauce with chili . You soaki the dried chili with water for like 15m 30m after you cut them , throw the water out and bland the chili with a bit of water and it turn into a paste , cook the paste with some garlic and red onion in oil , and put the tomato pasta sauce after the chili cook and put some salt and sugar , done . You can add whatever you want like a cheese or sausage or mince beef . Trust me it would taste so so good . Spicy and tangy . I need to make them tonight 😋😋😋😋😋
Also love to grate my own cheese too! The pre-grated cheese is coated in preservatives so it gives it a different taste, texture and it doesn’t melt as smoothly
Chili with noodles is definitely a midwest thing! That's always how I ate Chili growing up.
my family makes our cincinnati style from scratch, I've never lived there (we're from florida) but we usually eat it in a bowl like normal chili with beans added in, it's just creamier than normal chili and wonderful
Canned Gold Star Cincinatti Chili qualifies for your hard times series too. The dollar store in Cincinatti often has it two cans for a $. Some people serve it with sauerkraut, there were a alot of Germans in Cinci too.

Cincinnati chili is basically an adaptation-evolution of a very common Greek dish, “makaronia me kima” (pasta with ground meat) that has a mild onion-tomatoey sauce with a little cinnamon in it. Usually you’d put a little kefalotyri on it (a salty sharp grating cheese). I’d be surprised if they didn’t do something similar over the border in FYROM too.
You can buy the Skyline Chilli spice mix. My favorite. I lived in Columbus, Ohio and loved going to their restaurant.

Haha! I eat skyline at least once whenever I go back home. Definitely tasty. My favorite way to eat skyline is by creating a dip... bottom is cream cheese, then a nice layer of skyline, then a layer of cheese. Bake it until hot and dip in corn chips!
As someone from Cincinnati, skyline is way better than gold star. Skyline is the more spiced one and gold star the more bland one when you have it fresh.

We’re in Emmie’s home kitchen again! Gold star is cinnamon forward. Skyline is cocoa powder forward. I refuse to eat Skyline, but am making homemade Goldstar tonight. Cincinnatian here who orders a 4 way onion. When people eat in, they often take the oyster crackers and top them with a drop of hot sauce on them. Also, at the restaurant it is stacked so well you can cut it into perfect bites that don’t fall apart.
I've always been more partial to Skyline. The last time I tried Goldstar it was more sweet tasting than Skylines salty taste. I'll try it again sometime and see if my tastebuds change. Glad you enjoyed them!
So one big thing here in Colorado is the Green Chili Slopper. It is pretty specific to Pueblo, Colorado but there's been an episode of "Food Wars" on Travel Channel featuring two of the best taverns in Pueblo. But, if you make it, you have to do the green chili with pueblo chili's
I travelled, worked and was Lead Exec onsite at a manufacturing company in Milford, OH and I love Skyline three way with spaghettie and a dog three way. They are incredibly light and the sauce is just better.
I love our local chili cook off. A lot of companies will make their chili with chocolate and cinnamon. Love it!

We associate cinnamon with desserts here in the US, but according to many of my Indian coworkers, they actually use cinnamon in a lot of their main course items, like curry and chili. They were actually somewhat surprised when I brought them some fall and winter desserts that contained cinnamon (mainly in snickerdoodles and pumpkin rolls). They said that the desserts tasted familiar in some way that they couldn't identify - and when I said it had cinnamon on it/in it, they thought it was strange to see paired with sugar and other sweet things.
As for Cincinnati chili, I've never been to either place, but we have made our own, which is highly recommended in my opinion. I've had a lot of different chili sauces from restaurants and they usually don't end up quite as spicy as my family prefers our chili. We go through a *lot* of chili powder during the winter. But my dad's chili has so many spices I probably couldn't list them all - but there's some pretty unique ones in there like curry powder.

How cool that Cincy chilli made it on your channel! They sell seasoning packets that you just add to ground beef and tomato paste to make it yourself. Thats better and closer to the restaurant flavor than either canned product is. Plus, you can make substitue ingredients. For example, I like to use ground turkey instead of beef :) Thanks!!

I'm from Indiana, neighboring Ohio. We've always eaten chili with pasta, however my mom & I make it with macaroni. It was so much easier & neater to cook, serve, & eat than spaghetti noodles. We call it Chili Mac tho.
I'm from Southern Indiana and grew up with chili that has spaghetti in it....both school lunches and my mom's (and DON'T forget the peanut butter sandwich that was always served with it). I didn't know about "Cincinnati style" chili, but certainly had no idea that chili was available without pasta (specifically spaghetti) until I grew up and started traveling. Mmmm chili. I'm from a town about 30 mins from Cincinnati. I used to eat Gold Star and Skyline all the time. When I was pregnant I ate Skyline about every other day not joking. I moved to Kentucky and I am forced to buy it in the can and it might not be the same I'm grateful, I can get close to the experience of eating at the restaurant. What I am missing is the fluffy cheese. Oh it's also better with oyster crackers and hot sauce!
Emmy, I'd love to see you make Runza. It's a delicious beef, cabbage (sometime sauerkraut, sometimes cheese) and onion filled bread pocket, mostly found in Nebraska and Kansas. There's even a regional fast food chain that sells them. I'm from Iowa, but my dad is from Nebraska and whenever we visited his family we would stop there, so I have really fond childhood memories of them, and I make my own now, since the nearest one is over 100 miles away.

Or some tomato pie. For more info on any of these Andrew Zimmerman did a bizarre foods episode on the Erie Canal. With a pit stop in Utica NY, very close to my home town.
You need to try Runzas. It's from Nebraska mainly in Lincoln. It has German Russian roots and was a peasant dish. It is sooo good.
I worked at a place called Hard Times Cafe when I was in college. They served this dish there.

My grandma made something similar to chili spaghetti but it was basically crushed tomatoes and that packaged chili seasoning you find by like packaged taco seasoning and meatloaf seasoning. Not really the same as this so Idk if that counts but my mom’s always called it chili spaghetti

You have to try New Mexican Hatch green chile! You can eat it with anything- enchiladas, breakfast burritos (actually any kind of savory breakfast), pizza, burgers, pasta, you name it!
I've been putting chili on egg noodles for years. Recently I've gotten crazy and put it on top of gnocchi with sharp cheddar. Your bun should be toasted and your cheese should be melted . True story, my Mom, brother, and I lived in Cincinnati in the early 70's.
