  • Happy National Homemade Soup Day! It would be cause for celebration if it wasn't for the fact that... I'm not the biggest fan of most soups.
    Lucky for me, I can take advantage of a linguistic oddity: the Italian word "zuppa" is always translated as "soup," but the truth is that a zuppa is something a little bit different. Even if you're a soup skeptic like me, you might want to check out these zuppe that Eva's cooking today.

      How about Acqua Cotta (viterbese)? It includes the egg like the zuppa Pavese…. Great explanation of what zuppa actually is!

      My man don't think you have seen all that Italian zuppa has to offer until you have tasted ribollita. To me there is absolutely nothing better when talking about soups.
      With Eva being such a wonderful cook I'm sure she could make you a really mean ribollita

    I'm Asian (Viet/Korean raised by a single Vietnamese mom) and soup is the backbone of my culture. We Vietnamese typically eat pho for breakfast. I can happily eat soup at least once a day for the rest of my life -- no joke! My husband (who is of European descent) does not understand my love for soup, and I don't understand how he doesn't love it. There is just something so comforting about soup, especially on a cold day, or if I'm under the weather. Soup is love in a bowl. It's a delicious, edible, warm hug.

      As a south east asian. soup is so integral to our life that even in the hottest weather we cannot survive a day without having warm soup with every meal

      as a Dominican-American, whose family hails from a hot-as-balls Caribbean island, who eats sancocho (meat soup/stew) year round, I also agree that soup is essential for me: clear broths, creamy broths, stews--I don't discriminate! But I can't think of anything that will change Harper's mind LOL

    Here in Lombardy there's a say "se l'è minga supa, l'è pan bagnà" which translates to "if it's not soup, it's wet bread" meaning that it's the same thing

    Soup is extraordinary. People can live on soup and even have soup for breakfast, lunch, and dinner from various national cuisines. Soup is filling and healthy. You will never get sick from hot soup. The boiling kills all bacteria. Homemade Italian-style chicken soup is a miracle food. The Zuppa Pavese looks fabulous. I’ve never had it, but I am going to make it. Thanks Eva.

    😂😂 National soup day! I just finished canning 8 gallons of chicken soup using 22lb of chicken, 3 bunches if cellery ,3 bunches of carrots, a bag of onions,and a 2 lb of brown rice.

    I beat one egg with pecorino cheese and while the soup broth is boiling drop it in and let it cook for a minute. Then pour it over the bread. My grandma always made this mixture for our holiday chicken soup. It flavors the soup sooooo....gooood!

    I just finished a bowl of Zuppa Pavese and it is now my favorite soup. I did add some frozen peas and carrots for a little color and I poached the egg in the broth which worked well. Such simple ingredients but such a delicious soup. I think I'll make this for dinner tomorrow night too! Thank you Harper and Eva for another delicious recipe.

    In Genova we loved to make passata di verdure, a dense vegetable soup blended with a hand mixer and served with olive oil & pesto. Perfect winter dish! 🇮🇹

    i'm really glad this channel is here. yea we teach the nieces and nephews the recipes my grandmother taught us. But sometimes they just don't get it. Having this channel lets them understand just a bit better what we're talking about because they see it from someone elses point of view. and some how it just clicks for them better.

    I'm watching this while eating a soup of my own. Not as good as Eva's, but good enough. My mom always made soup as an antipasto at home. I didn't appreciate it much when I was a child, but it grew on me over time, and now I love it.

    Those noises Harper makes are a result of foodgasms and are an extremely high, if not the highest, compliment a cook can be given. The food is so good that the diner is not going to waste a moment of eating on trying to form words

    I’m beginning to think Alexa is listening to me or reading my mind. Yesterday I watched an old American Test Kitchen show and they made this cabbage baked soup and I found it something I had to make! Now I’m obsessed with making it for my first generation Italian husband (my Valentine)💌

    If the first zuppa should be served with a raw egg, I think a poached egg would be better because you can keep it really runny. Can’t wait to try this.

    Last two zuppe almost like Italian take on French onion soup without interruption of onion.And thank you bringing recipe from Valle d’Aosta.❤That region of Italy has special place in my heart.They have some of my favorite ingredient ,which they harvest a lot of from their forests and mountains-fungi porcini!!!

    Yeah, I can definitely see getting into the last one for sure! It's really adorable to see Eva get a little emotional when it comes to hearing your grunt of food pleasure lol. She isn't much to show big emotions and neither is my Italian family (in that way anyway). I LOVE it!

    Looks great.
    If you're looking for sheep, a good place is the South Asian Muslim markets with a halal butcher. Usually it's labelled mutton. A good substitute for mutton is goat. The Arab butchers for that, but I reckon if you have Africans, Jamaicans, and/or Dominicans in the area they may direct you to their sources. Both are much cheaper but tastier than lamb, but longer cooking time because they're tough. And goats are hearty beasts that can handle the desert. You ought to raise a few in the garden, Harper.

    You probably missed Aosta because it's such a small region, and because it's about as far from Calabria as it's possible to go in Italy.
    An alternative to fontina is raclette cheese from next door in the Swiss canton of Valais, also very good.
    Do some Valtellina dishes as well! Pizzoccheri are a classic.

    A Valle D'aosta recipe! :D The farther northwest you go in Italy, the stronger the French and German influences like using more butter and cabbage.
    I would love to see your take on bagna cauda (my Nonna's go-to recipe for Lent), vitello tonnato, and bonet.

    Cinnamon is also used a lot in Chinese savory dishes, but it's almost undetectable because it combines so well with the other fragrant spices. This was another fantastic video.

    The bread lasagne is giving me serious inspiration. I have a fresh baked loaf of bread and I love toasted slices of bread with melted mozzarella on top. So yes the layered bread and mozzarella looks divine!

    Thank you for showing different delicious ways of savoring broth ! So far, when eating with carbohydrate, I’ve been enjoying broth only with plain steamed rice - the Asian way : the Chinese, the Japanese, the Thai, the Vietnamese, the Korean, etc. all soak plain steamed rice in broth before eating it.

    Ooo, this is very similar to a favorite breakfast! I poach eggs in chicken broth, and then add them to a bowl piled full of fresh spinach, broth and all. Serve with plenty of toasted bread.
    Will definitely try this!

    I also let out some grunts when I'm really enjoying my food 😊. Thanks Harper, I feel less alone now! I'm a big soup lover, and there are so many great soups around the world: French onion soup, Vietnamese pho, Thai tom yum, or Turkish lentil soup (shorbet adas). Of course I suppose I'd be less of a soup enthusiast if I lived in Nevada instead of Belgium 😂

    Amazing! In Portugal we have something very very similar, but the egg is poached and we use a handfull of parsley grinded with salt in a mortar and pestle. It's called Açorda Alentejana (: i always love to see proofs of cultural exchange (:

    My Son in-law was never a fan of soup/ stew but now every few months (sometimes more) he calls me with a request to make for him. I do know several folks that say they don't care for it, but I love it, even in the summer! Unless it's tomato based, then I hate it, the only tomato broth I will slurp up is a properly made Bloody Mary😋

    Wonderful video! I now have the urge to make a zuppa tonight! I want to add that "zuppa" is derived from the Italian verb "inzuppare" which means to soak or to saturate something in a liquid. Now I would love to see a video on "minestra"...per non saltare la finestra!

    In Spain our "sopa" is exactly the same concept. It's clear broth + carbs. The carbs in the more ancient styles can be stale bread (garlic soup is a classic in Castile) or short pasta shapes, like fideos or galets (catalán escudella soup).
    For us, what other countries call soup would be called a crema (cream) if it's a smooth thick consistency or a stew if it contains legumes, like lentils or beans.

    I love soup. Our multi family holiday and special occasion dinners always start (other than appetizers) with a first course Soup. It’s never the same soup either so I’m happy that you made this video to add to our roster of new soups to introduce to the family.     I live for soup. I will turn up the A/C to eat soup in the summer. Can’t wait to see/hear your recipes. MUST HAVE BREAD FOR DIPPING!

    Im definitely a soup LOVER! ❤ I'm of Italian decent & grew up eating homemade soup 12 months of the year, including summer. My Mother served it along with a crusty rustic bread as well as some type of Fritatta on the side.

    Have you considered opening an online or brick and mortar Italian-Specialty store? Perhaps import, Cheese, Dried Meats, Pasta, etc….

    Our Finnish salmon soup with our buttered rye bread is fabulous!! I also love our pea soup, with rye bread.
