CHICKEN CORDON BLEU CASSEROLE
Serves: 6
2 lbs boneless, skinless chicken breast or thighs
1 tablespoon avocado oil or olive oil
8 oz cubed ham (precooked)
2 tablespoons butter
1/3 cup heavy cream
1/4 cup chicken broth
1/4 cup white wine
1 1/2 cups shredded Monterey Jack cheese
2 tablespoons Dijon mustard
1/2 teaspoon red pepper flakes, optional
1/4 teaspoon cayenne pepper, optional
1/4 teaspoon salt
1/4 teaspoon black pepper
1 1/2 cups shredded Swiss cheese
1️⃣ 01:05 - Prep the Chicken
Cut the chicken thighs or chicken breast into bite sized chunks.
2️⃣ 01:28 - Cook the Chicken
Add avocado oil to a skillet and heat over medium high heat. Working in batches, pan sear chicken until cooked evenly on all sides.
3️⃣ 01:39 - Add the Ham
Add ham to the skillet with the cooked chicken and cook for 1 minute to heat through and to decrease moisture of chicken if a high moisture content ham was selected. Remove all chicken and ham from skillet and set aside.
4️⃣ 02:16 - Make the White Wine Sauce
Lower heat on the skillet to medium heat. Melt butter in the skillet. Slowly whisk in heavy cream, chicken broth and wine into the melted butter. Scrape the bottom of the pan to break up the flavor bits stuck to the bottom. Let cook for 1-3 minutes. Don't let boil. Slowly stir in shredded Monterey Jack cheese. Add one handful at a time and stir until melted.
5️⃣ 03:33 - Add Flavor to the Sauce
Stir in Dijon mustard, red pepper flakes, cayenne pepper, salt and pepper. Remove sauce from heat.
6️⃣ 03:59 - Assemble Casserole & Bake
To a square or rectangle baking dish, add chicken and ham mixture to the bottom. Pour on white wine cheese sauce. Top with shredded Swiss cheese. Bake at 350 degrees for 20-25 minutes.

I love your spatula collection. I’m a freak on kitchen appliances and kitchen accessories. I have many many appliances and some are two alike. Like I have two pressure cookers, one instabpot. A ninja 4 way cooker. Two counter top induction cookers ,two ricer cookers, blenders ( plural ) processors. ( plural ) and on and on. Plus all the miniature dash cookers. I know I’m a kitchen freak.

Foods cooked in duck fat are fab ( especially eggs). You can buy it anywhere, now.

It would work, but it would also increase cream. And lactose, if that’s a problem for you. And nothing beats the flavor of cream!
U would like to know what cream is heavy cream in UK 🇬🇧 I've been buying extra thick full fat but thats not pourable, anyone know the British equivalent?

Totally but I usually have a hard time meeting my fat macro - Not that I am trying for meet it but I mostly eat proteins and veggies and just use fat for cooking oil. So something like this is a nice change 😄

This is way too rich for us. I served it over a bed of spinach. Even better was using it with the spinach in an omelet. The spinach and egg really helped cut it.
Please pronouce cordon bleu with an accent, cordon bliurr.
Wow, your inner Julia Child has surfaced. How cool. I just want to take a moment to thank you for all the work you do on your recipes and videos. I am a 77 year old male who just started cooking a few years ago. My wife always teases me that I should experiment more but I tend to follow recipes to the letter, especially the first time I make them. I have made many of your recipes successfully including cookies, sheet pan fajitas and more. Last night we made Minestrone soup, it was great. BUt mostly I wanted to thank you for the cheesecake recipe. Giving up fancy desserts was a hard thing for me so I decided I would try the cheesecake. OMG it WORKED. It was fabulous. I served it at a dinner party and did not tell anyone until afterwards that had just had KETO dessert. They were amazed. Thanks again. I will try this recipe tomorrow.
In real life Julia child was a quite a prideful and ignorant person, cook like her, don’t be like her. TV loves to make heroes and villains, I’m not saying either direction is where you should put her, but her last name might as well have been arrogant child, she cooked well, was funny, but she was no hero. Movies and TV just make her look sweet, but she was selfish and a lost soul unless she changed on her deathbed. 😞 She even worked with agencies that supported propagamda. I don’t think she was evil, but she was willing to compromise and hurt others if it got her what she wanted. That’s wrong.
The original Julia child comment did make me laugh. But the blasphemy comment made me cringe, even though I know it’s a joke, but it sounded like the pushed hero worship and revisionist history she gets so she can be seen as a hero of sorts rather than a very flight individual who was good at cooking and chosen to be elevated and hyped even after death.
I've got a lot of diced slab bacon and pork bellies leftover from New Years. I'm thinking they would be ideal replacements for the ham in this recipe.

I made this today with about 2/3 of a rotisserie chicken. It was a super tasty lunch with a side salad. My husband really enjoyed it too!

Question from keto newbie, so if me n hubby split this ( just I'm doing keto & mostly omad sometimes 2mad & I'm trying to stay under 20 g carbs for veg a day) would I still loose weight if we split this for 1 meal bc im under my carb total for the day?

This is a fave, but I’ve never done it with Jack cheese in the sauce - I think I’m going to follow your lead next time! I have also used a squirt of Nando’s Peri-Peri sauce into the sauce in place of the cayenne & pepper flakes.

I had a parent whose child rode my school bus and in spring she would hand me a paper sandwich bag full of rinsed asparagus from her own asparagus bed. Slender but not skinny asparagus. Down the rode I would pull over and hand them out. Had the elementary kids munching sweet fresh asparagus on way to school. Its also great for anyone prone to UTI'S.
What is the whole carb count?
I made this a few days ago and it was amazing. It was even better the next day. I had to drain the pan after I put the ham in because of the extra water from it was causing the chicken not to brown. I will be making this often rather than the traditional way. Thanks for the great recipe!

When you say white wine do you mean Riesling, Chardonnay, Rhine ??? There’s so many!

I always thought cheese, heavy cream, and ham were full of carbs, calories, etc 🤔
Heavy cream has 0.3 g carbs per tablespoon. The ham I bought is zero carbs. It doesn’t contain any sugar - it’s from Pederson Farms. As the cheese, it depends on the cheese you get. If you buy block cheese, depending on the type, it doesn’t have carbs or ver low carbs
