You change the eggs because you want them all to START warming up at the SAME TIME! Then they will all hatch at the same time. If you did not do this, your chicks would arrive at different times because you don't know when the other eggs were laid and when she started to warm them!
And if 2 or 3 chicks will hatch first and hen goes out with those chicks, she will never sit on rest of the eggs and remaining eggs will be ruined and go bad. So this is a good way to deal with this situation
